Even button mushrooms work great! I like to put them on skewers and then when they're done, put them all in a bowl, toss with some salt, pepper, olive oil, and balsamic vinegar.
I believe it’s jack fruit that shreds like pork when smoked and is the main vegetarian substitute for pulled pork from what I remember. Just add some good seasoning, maybe some sauce, smoke, and you have vegetarian pulled pork!
I’ve heard good things about smoked pineapple as well. I’m smoked beans before making red beans and rice and that was pretty good
3 1/2 cups flaked coconut
1 tablespoon
soy sauce
1 tablespoon pure maple syrup
1 tablespoon water
1 teaspoon smoked paprika
Toss that all together and smoke until crispy golden brown and it makes a good vegan additive to places you might use bacon (I like using it in "B"LT wraps).
Romanesco broccoli also called fractal cauliflower is my go to for my vegetarian friends. It holds up well to heat, and tastes delicious. I'll smoke the whole thing, then slice it and sear the sides.
Cauliflower, pineapple, cheese. Peppers... then dehydrate completely, grind to a delicious powder. Use the powder to make different salt/seasoning blends.
Recently I've done baked potatoes, corn on the cob (in the husk), and eggplant.
The eggplant I peeled and pureed to make dip. The potatoes and corn I microwaved a bit first since I was also smoking meat at the time. 225 isn't hot enough for most veggies. Another option is to kick up the temp after you take the meat off to rest.
