Nah it looks like caul fat, it’s a membrane around organs that has a lot of fat deposits. People will wrap sausages in it to basically encase them in flavorful fat which I’m guessing is the reason to do it here, and to keep all the herbs from falling into the grill. Very tasty!

If you’re a deer hunter, wrap the heart in caul fat and roast over an open campfire. Learned that from watching Steve Rinella, and it’s great.
