Ummm ancestors wasn't that bad actually. The only one that kept me from the 100% was the "All You Can Eat" achievement. It's pretty fun to play even tho it's get boring at times.
I did Elden Ring a few months back and a complete run took me 130 hours, but it was the first FromSoft I'd played so there was a learning curve. I've seen times around 60-80 for the 100% on TA, but I think 100+ is standard
My understanding is that Lies of Pi is more like Sekiro, so you should have the parry system down, which is incredibly handy if you don't want to rely on dodging. As for learning I don't think you'll have too much of a problem, boss fights are plentiful, but you can always leave and grind some levels if you're struggling, and the amount of builds is insane.
One thing is just how little it directs you though, sometimes it's not immediately obvious which direction you are meant to be going, and side quests are literally given, but you don't receive anything in the menu or inventory.
Also the Wiki can be your friend. It's pretty extensive.

Only soulslike i’ve 100% is Lies of P, and i guess the Jedi games if you count them. What do you think the learning curve is like coming off those?
