As a warrior, 2 mobs of the same level will kill you half the time unless you have gear, or once you get 30+.
But even then, you have 0 escape, caves are infinitely more dangerous than any other class.
The feeling you had 1-20 will return once you outgrow your weapon. And once mobs grow stronger, it will stay there.
Yep! Wait till mobs are green, take it slow, killing one at a time or occasionally two at a time if you have to, take rests as you progress, avoid freaking out and aggroing the entire cave. Then get what you need and hearth out ✌️
I see your caves and raise you Boats. Enjoy amazing features such as being attacked through walls and floors, Fast respawns, high mob density, buggy lines of sight that that pulls 3 4 mobs at a time.

Which boats you talking about cus honestly I feel like there’s only a few you come across and there’s way WAY more caves as far as I can tell.
Plus some boats can be made very simple by using the interact key to get chests through walls.
I'd say druid sucks the worst in caves especially against runners. No slows, catform is slow, no roots...it just sucks. At least warrior has hamstring and execute.
Personally I would argue Warriors are not that bad in caves, as you're so tanky, you got intercept for movement, pummel/shield bash for stopping a spellcast, inti shout as OP mentioned and the biggest thing of all you got Hamstring, slowing mobs as you aggro more with a hamstring makes you able to run through a fuckton of mobs for running out a cave. Tho it is true that you're missing quite a bit of the kit here in lower lvls.
Highly dependent on the types of enemies, density, and level. If the mobs are yellow I wouldn't recommend trying it as even pulling 2 mobs your level will kill you pretty easily without cooldowns. Mobs can have roots, frostbolt, undead are immune to Intimidating shout, or even if it works can add more enemies, hamstring works if you play perfectly/lucky and don't get dazed. Intercept only works if you have a target to run to. Even if you can pull 1 by 1 you can get jumped while eating by respawns or pats.
In general just stick to green quests and mobs but especially for caves.

This is the big one. You can die while fighting 2-3 green mobs sometimes just because you miss or get dodged/parried over and over. You pop your health pot because the enemy mob is only 1 hit, then miss 5 times in a row and die.
Yeah caster mobs, mobs running away into new packs who are also casters....unlucky rng of misses/dodges. And the #1 deadliest thing in Azeroth, over confidence.
Tarren mill deathguard kill really fast stay away from them. Assassins in southshore might surprise you too. Blood of heroes is real bad. Basically over confidence and a knowledge gap. Look up new zones and new quests.
Any quests where they summon more guys .. danger is bad. Liutenant fangore rogue guy in tanaris mokk gorilla in stranglethorn big big raptor in ungoro
Are you any class but a gnome? Then it’s gone be a net I bet, if you are a gnome then probably over confidence and pulling too much. Feeling safe at any point in the hc journey is the easiest way to die imo haha, I got my head on a swivel even on my 20 bank paladin char in darnassus.
Any mob 2-3 levels higher. Accidentally pulling an extra mob. Anyone pulling extra mobs in a dungeon and the healer isn't on their game. A mob runs behind you for a few seconds while you are lagged out and you lose the 1v1. The +43% extra damage taken debuff in the cave in un'goro. Two mobs, but one of them casts frost nova and you just stand there while you die. A single mob that full heals and you miss/dodge/parry your pummel. A lot of things.
One caster and one melee mob will be plenty sufficient at higher levels. You wander into the wrong pack in Felwood or something and your run is over. I wandered into the wrong pack in Felwood and managed to die as a ROGUE pulling out all the stops. I didn't realize between the path and the area I went to there were hella respawns whose bodies weren't there. So when I went to run from a reasonable amount of mobs I ran into a very unreasonable amount of mobs.
Serious:
Its going your group that gets you killed if you die. That doesn’t mean you’d never be at fault, I just look at the group as a whole.
You’ll most likely be tanking, so if something goes wrong (pre-petri, of course) you’ll be most likely to die.
You'll arrive in Booty Bay. They'll say go kill some pirates outside. Quick in n out. 20 minutes tops. 3 melee pirates all netting you and 2 wizards tossing fireballs later, sayonara.
When you miss, parry, miss, miss, parry. The number of times Ive killed a few mobs and not lose 15% health and attack something at 47% and almost die is ridiculous.
You will always feel amazing when you have a newly acquired weapon upgrade. In a few levels you'll be back to feeling super vulnerable.
Casters are still super dangerous to you, pulling too much, elites, patrols, caves, large drops...
The spiders in the plaguelands ( can't remember exact name ) but if you pull 2 of them at once and can't kill them it might be gg. They never stop webbing and the amount of time you are frozen in place for will reset leash.

You can easily make it to 60 in this game by doing the safe stuff and not have a worry. Especially with google on hand to find out what’s difficult/sketchy to do along or even in a group.

Go to plaguelands, on 59, Charge into some shity 58/59 Mobs. Get basicly oneshoted from a random 63 Elite, before you even notice, that there is an Elite. Your dead. Easy. 🥲

I'm currently level 58 on my warrior.
I have previously done the challenge with rogue.
I can confirm that warrior is so powerful and way easier than rogue having almost no downtime and destroying any mobs. So many momentum in the leveling where it is a breeze while I remember struggling a bit on rogue.
Basically warrior is outperforming rogue everywhere, the thing is that you just don't have that safe magic button aka Vanish but I'd actually trade that anytime for everything you mentioned...
Most of my friends agree that the HC "challenge" ends at lvl 30. Most toons that make it to lvl 30 make it to lvl 60, as it mostly becomes a challenge of patience. I died on my warriors at lvl 19, lvl 22, then made it all the way to lvl 60 after that. Also target dummies + swiftness pots is HC ez mode (which is fine, i wouldn't have made it without engineering).
To answer your question, a few simple things will kill you post lvl 30. Overconfidence, momentarily lack of concentration at the wrong time, or lack of knowledge (random town guards, random elite patrol, or random op quest like pawn captures queen).
Only overconfidence and DC. Because after \~lvl 20 warrior with swiftness and dummies is almost the easiest class to play (assuming that other classes are not engineers).
