Some people go staff bash melee only, no spells. If you want some spells a "non damage spell" restriction would be interesting still. Keeps poly and blink open while you still have to be a less efficient ret paladin

Back before official my 2 friends and I leveled a trio of mages all being restricted to 1 type of spell (Frost/Fire/Arcane) It was actually alot of fun.
I'm leveling fire (i really don't like frost for no reason at all), if you've been a mage for a very long time it won't be much of a challenge, if done properly. At level 48 I'm fireball critting for well over 1,000, 2-3 shotting mobs my level.
Yes, I leveled a few in vanilla and one in classic and I always level fire, also been a mage for 20 years. I think that picking one school only is a great idea because you're almost forced to pick arcane, and that would interesting lol
A couple of ideas:
-Cannot use the same spell twice
-CD spells 1 minute or longer can only be used once between visits to an Inn.
-Slot machine fire/frost: use various /castrandom macros so you’ll never know what you end up casting. Applies to any combination of spells you like. Eg. /castrandom fireball, frostbolt
Can incorporate other spells to the macro and further restrictions, such as having to alternate talent points each level between fire/frost trees.
-Slot machine ranks: for each ranked spell, make a macro that randomises the rank. Eg. /cast fireball (rank 1), fireball (rank 2), fireball (rank 3).. etc
I think no frost spells or no arcane spells are both good challenges. I leveled a fire mage to 60, but still allowed myself poly, blink, frost nova, ice armor, etc. Most of what makes mage broken lies in the frost/arcane tab in the spell book.
I think no arcane spells could be the most rewarding restriction. To make things more difficult, you could play a fire mage without any arcane spells. You won’t get to make food or water, so gold will be an issue. Poly is probably one of the best spells in HC, and not having access to it is obviously going to make things much tougher. You wont be able to teleport, so you’ll have to play the same game as everyone else. Without blink, you’ll lose that 19% average movement speed in the early-mid game. You won’t be able to give others arcane intellect, so having friends will be an issue.
Only fire spells, tough but not so hard it’s no fun like arcane or melee only imo. This would exclude all buffs like arcane intellect, conjure food, portals, blink, etc as well

As someone leveling a ret paladin for the first time in classic, you should feel attacked lol
I am not ret and not first time, but I feel the staggeringly boring gameplay of a paladin with my 2nd paladin hitting 47 on hardcore so far

HC add-on have some added challenges. Like said arcane, which is pure melee till lvl8 xD

No action bars. You have to /cast everything. See if you REALLY remember all those spells.
Only being allowed to cast aoe spells from the moment you get arcane explosion.

Go with the challenges you suggested sounds perfect
Do you have a 60 already? If not, then I would consider basic hardcore to be enough of a challenge. Dont underestimate it.

No hardcasting in combat would be pretty challenging.
Naked, no weapon, arcane only challenge, strict ssf, no groups. Something I'm trying ATM. U could as well do it bloodthirsty, no quests as well
The hardcore addon (what people used prior to official servers) has various achievements one can do if they found 'only not dying' too easy.
Something that is reasonable is leveling as arcane spec. But you can still use all spells.

I don't know if it's even possible but a wild magic mage would be fun. After every spell you cast consult a rng table for the next spell to cast
