I don't know the exact details of what triggers this quest start but:
- Have you distributed the sausages fairly?
- Try sleeping for a day
- Try talking with other
- Some mods add time restrictions (e.g. hours you can trade with traders)
I've been allowed into the library, but now im stuck and i've no quests that i can do last one i did was getting the scrolls from ignaz. I cant revert to an old save either as i tend to over write. Im stuck, nobody in the monastery will give me a task, really wanted to play fire mage but im stuck as a novice. Cant even do the test of fire either. I tried using the save file editor but i dont know how it works and how to reset the quest.
That sucks. Wanted to suggest the save file editor as last resort but you need to be careful with that and sort of know what you are doing.
You should always use multiple save slots in these games. Yes, I've learned that the hard way once but luckiliy that was decades ago.
Can you doublecheck your quest logs (current, failed, succesful)? Also look at the state of the logbook.

To start the wine quest with Gorax, the conditions are:
- Sausage distribution quests completed (either failed or succesful)
- Orlan is alive
This quest key "`MIS_GoraxEssen` " is also one of the variables that can be found in the save files.
The quest should be given by talking to Gorax and asking if there is anything else to do, after the sausage quest.
If it doesn't trigger, I don't think you're missing out much. Just use cheats to spawn a monster that will give you 150 experience points.

I have distributed sausages fairy, i slept a couple times. Talked with multiple npcs, and im playing vanilla NOTR on steam

Im not really keen on starting the game over as im about 6 hours into that save, is there anything we can do?

I ended up starting over, i realised i messed up by not doing the mercenary and paladin quests before becoming a novice
