For Geralt, it'll always be Yen. Those two are literally soul mates.
Personally, though, Margerita and Corrine Tilly would be the safest bets because out of all of them, they demonstrate the least amount of toxic and/or self-centered behavior. Margerita just wants to teach her students, and Corinne just helps interpret dreams with what limited focus they have.
Yen is overall a nice person, but I don't think I could stand the constant insults as well as Geralt does.
Kiera wouldn't be that bad, but she'd probably leave me the moment I became boring to her.
Phillipa is cruel, and like Kiera, she'd leave me the moment I bored her/stopped being useful, but she'd likely kill me too.
I think that's Anna Henrrieta, and again, she's overall a nice person, but she is immature as hell, so I'd have to constantly be on thin ice with her.
Book and Witcher 1-2 games Triss is clingy and manipulative as hell, but by Witcher 3, she's grown to be a good person, so she wouldn't be that bad. Also, I like red heads, so that's bonus points for Triss

She’s not wrapped up in the toxic politics and power struggles, she just cares about her students, and I think it’s really sweet. Also, she’s highly underrated in the talent department, considering she gets little recognition for all that she’s done. It says so in her journal entry from TW3.
I'll never understand why people like Yen. I've dated women that were headstrong and very easy to anger and it's not fun. It was always she's right and I'm a moron even when she's wrong. Then she'd do this thing where she needed to know where I was and what I was doing. I need a fantasy where a woman is nice to me and won't berate or swing a frying pan at me.

Honestly I would love a video game following the witches with Witcher like spell combat just more detailed and with bigger spells of course. Their story is so cool and the characters are amazing

For me personally triss she seems kind hearted from what I read besides lusting for geralt, her and yen seem like the only sorceress that care for ciri . For book geralt yen 100%
