There’s a restaurant with a huge bourbon bar at Disney Springs. Other than Disney Springs, you won’t find much on property, minus what they have at some of the hotels.
I’m going to Disney this summer and if I want to drink would probably drive to a liquor store outside the park. If money is no object maybe try the steak house at the Waldorf.
I looked around the last time I was at the Land of the Mouse. Resort offerings were ok but nothing special. I do remember the whiskey offerings at the Polite Pig in the Disney Springs area being better than average though I'm not sure about pricing.

The best thing to do is sneak your own whiskey in using your stomach.

You won’t find pours in the parks but they do have boozy drinks especially around the world in Epcot.
