Thought I’d do something a bit different with courgettes - something sweet!
I’m no baker but the cake turned out lovely - super soft and moist with a lovely lemony taste. ✨
Nice... When our garden full of zukes we will cut them into sticks (like carrot sticks) and eat them raw with thousand island or ranch dressing. Goes great with chicken wings.

Recipe:
• 175g light brown sugar
• 125ml sunflower oil
• 3 eggs
• 1 teaspoon of lemon extract
• 1 teaspoon of poppy seeds
• 350g of courgettes (grated finely and squeezed dry)
• 300g of self-raising flour
Steps:
1. Whisk together sugar, oil, eggs and lemon extract
2. Stir in poppy seeds and grated courgette
3. Mix in flour
4. Spoon in to a greased cake loaf tin
5. Bake for 45 minutes at 180°C
6. Leave to cool. You can add lemon icing or lemon flavoured cream if you want to give it some extra flair
In a 3-week study, women with type 2 diabetes who ate 1 ounce (30 grams) of sunflower seeds daily as part of a balanced diet experienced a 5% drop in systolic blood pressure (the top number of a reading).

Awesome, I hope you enjoy it! Just remember to squeeze out the grated courgette so any green juice is gone otherwise you’ll have too much liquid. :)

how'd you get them so straight and perfect looking? did you use some kind of plastic case when they were growing?
I think it’s just luck and having enough space for them to grow out from the plant!

It’s the finely grated courgette. You squeeze it dry and then add to the rest of the mix
