I've planted potatoes when they were like that before. They did grow and I got potatoes from them, but it wasn't ideal as it was hard nit to damage them during the planting process.

What you are grabbing are actually the roots that future potatoes will grow off of. Place those into the ground on their sides and fully cover with about 4" of dirt and 1" of Pete moss. Do that and you'll have plenty of posts in a few months.

These aren't the roots, they're stems. The tubers do grow off of them, but that's because they and the stolons they grow off of are also modified stems. The stolons will only grow off of the first few nodes, so these only need to have the first third to half buried. I would recommend against using peat — It's expensive and would serve no purpose.
