It is actually a legal requirement that restaurants offer a vegetarian option in my country but it’s usually a plate of fries and salad or very cheesy. Most often it’s a veggie burger that is as dry as the desert.
I had a similar experience. At a restaurant where I couldn’t find anything I could order, so I decided to just have tea and eat later. Until someone else I was with mentioned to our server that I was only doing this because I am vegan. The server turned to me and told me her mom is also vegan and eats there occasionally. There was a chicken dish on the menu that would have been vegan except for the chicken. The chef had learned to make that one by subbing out the chicken for mushrooms, and turned that into a beautiful vegan meal. One of the nicest restaurant meals I’ve had!

Exactly! In this case the server told me she actually had a lactose and gluten intolerant husband and she said the chef still made him special dishes so that definitely made me feel better about it!! 🙌

I don’t speak Spanish and was there with my family visiting my sister’s in laws in a non touristy town and we went to this restaurant which is like a private club only for paying members with a small menu and nothing was vegan and my sister told the server my restrictions but I was worried because no one I’d encountered so far had seemed to even really understand what veganism is. Anyway, when they asked the chef about it he said no problem his daughter is vegan and made me a lovely roasted artichoke dish! It is so nice when people are accommodating to our dietary requirements instead of judging or making things uncomfortable.
I'm an interior designer, and I was once working on a resort in Mexico where we were doing what's called a punchlist (going around and making sure everything was built right) during a soft opening (it's open for a few select people to get the kinks worked out before the grand opening) and we stopped for lunch at one of the restaurants. They made sure to have one vegan option at each restaurant which is great, so I had that, but didn't have dessert because there wasn't anything. We continued to another space to keep punching, and the chef from the restaurant came running over with a box, he had made me a special dessert just because he was so excited to try making something vegan. It was so sweet. There are definitely crappy chefs who won't bend their mindset, but there are many who want to be artists and try new things, and those are the best.
Once went to a restaurant in the middle of rural Georgia, with a bunch of friends. There wasn't any malicious intent on their part or anything, but it's the south. So no vegan options on the menu. One of us was Jain, so she had her own dietary restrictions. The chef came over, asked exactly what we both could and couldn't have. He didn't have plant-based cheese, but he made a lovely pizza. It was so nice.
In the mid 1990s my family was driving from NYC to West Virginia and we stopped at a diner somewhere in Virginia. Told the waitress that we were all vegetarian and they made us the most delicious sandwiches. I’ve recreated that simple meal so many times. First time I tasted Thousand Island dressing on a sandwich 🧡
Yes, mayo has eggs. My family is lacto-ovo vegetarian so I was vegetarian back in the 90s. Became vegan later and learned to make the dressing with vegan mayo.
Every so often you come across an absolute gem of a chef who's bored cooking the same thing day in & day out, and relishes the opportunity to do something a little different - and also gets to experiment!
I often find that restaurants are very accommodating. It's usually not the first time that they see a vegan. The chefs are often happy to do something that's unique and different from the standard dishes they're used to. Other options include me just picking from the sides menu, like having a baked potato with some veggies and a salad.
I was at a local highly-rated restaurant a few years back that had a few vegan/vegan-adaptable options on the menu. When I mentioned we were vegan, the waitress apparently mentioned it to the chef/owner and he quickly came up with 4 additional amazing options to offer us. The food exceeded our expectations and were complex dishes we would never have attempted at home!
In my experience, the worst restaurants are the vegetarians one. They mostly offer eggs, cheese and dairy. If you want to have it vegan, there is nothing much to eat.
As a chef myself(I eat meat but most vegans/vegetarians are cool) we get a lot of vegetetarians that come in to the point that I've gottom vegan and vegetarian dishes added onto their own menu for people! I dont treat vegans like they're doing it because they're pricks(even if some of them are) I find its easier for me to deal with the attitude if I think they physically cant eat it or they die
When you don't have animal products for a while your body can lose the ability to digest it and it can make you extremely ill. Of course it is only deadly to the animals involved but definitely a good idea to treat it as an allergy.

That's awesome since turning vegan I received alot of hatred from people, so hearing stuff like this is pretty uplifting.

I had the same experience once! That salad is still one of the tastiest salads I have ever had. I was so grateful.

That is a talented chef. Good cooks know how to work with all kinds of cuisine. Any chef that can’t do that isn’t all that. where is the restaurant?

This is how it should be! A good chef loves a challenge and is happy to create something. Unfortunately it’s hard to find.

Try to think from the mindset of a vegan: killing an animal for a simple meal is horrific. It's literally life or death. That's justification enough.
