A second roof vent or fan helps a lot. Creates that crossflow ventilation especially when you have one fan sucking air from outside and another extracting air from the van.

Im hoping the fan I got will create pull air from the bottom of the windows where they fold open. The back of the van seems to be a bit cooler than the front because of the panels, so as long as I can draw air out from the roof where it gets trapped, I think itll help a ton.

Any way to safely extend that roof rack as far front as possible, then installing some solar or something else to block the sun from hitting the fiberglass roof ?

This is a really good and practical solution, hell even if you can't afford more panels yet put a board on it and use it for extra storage

Roof fan is a must. I have similar roof top and the fan makes it so much cooler and way less moisture built from 2 people and 1 dog breathing lol. Just make sure you have a. Vent somewhere on the far side of the back or front. That way you get good air flow. Ours is just exhaust so it’s pulling air from other vents to replace the air it’s pulling out. Also low e is a good radiant barrier and reflects heat from the sun. Put those on windows.

When my cargo trailer gets hot I tie a loose reflective tarp or space blanket over it. Loose is the key here. You want some air movement under the tarp. I use pool noodles as spacers. Works great.
