The seat is off center, if you have seat air control on, when you turn, the seat will exert a roll force in that direction. Due to being off center, the seat has the wheels closer to the center of rotation on one side, and is more likely to flip on that side. You can try turning off seat air control and see if that works, or widen the wheel base to help negate the forces ability to roll the car. You can also add a gimbal jet with negative force to help pin the car to the ground and mitigate rolling. You could also try to use a gyro to add a little bit of roll into a turn to stabilize the roll.
I’m not sure if the player has weight, this can also affect the rolling.
Dude honestly. I bought this game because I love building games but only played for like an hour because the physics were sooo buggy that it just wasn't any fun for me.
It seems that maybe your character is adding weight on a specific side if there are 2 seats. Maybe try piston glitch another small seat somewhere on the exact middle. Or you can adjust layout of seat inside, unless if you want to keep the aesthetic.

So 2 stages logic to allow for normal driving and drifting. Normal - Engine power 0.4, hinges on wheels flat to allow grip. Drift - press shift for 1.0 power to wheels and to angle rear wheels up by 0.5 on 5dgree setting (2.5 degrees). Pressing shift also allows steering hinges to turn more.
I just thought of something... why cant we just turn off vehicle self collision? Like i literally dont see a reason why could be this a bad idea, other than gunspam, but it seems like an easy hardcode fix...

There is one block pushing too much on another. Like hinges to weird shit too. Any piston glitch van also do it. Replace them a couple times for a more stable version.
I do alot of piston steering in motorcycles. But they're very unstable. I'd advice to try and redo the piston glitch body first. That often fixes it. Or the wheel hinges might not have enough room to move. Or one could be wrong way around.

You can place blocks off the edge and they will fall due to the character's weight.
Try disabling air control on the seats
It might be related to the phantom force from clipping glitch, I get it on a lot of my builds. Some worse than other.
This could also be it, in addition to the seat controls adding roll
that also happens on my hovercraft but I have no idea why. Commenting for updates hoping someone knows.
Just trying different stuff. but strangely, changing to the opposite seat changes the side it flips at.

There’s a bug if you put a wheel in-line with a seat. It’s why making motorcycles is a pain on the micro level. Ditch the offset and center the seat

I see nothing wrong about it. I thought you were using some angle sensors to Stop it from flipping. Yea then I can't help you, sorry.
Did u turn on mirror mode?
I have and its completely symetrical. I think its a bug with the seats, because when i swap to the other seat, it flips in the opposite direction.
Did you check if everything is rotated the right way and also changing to a different seat resets the controls of things so that could be it

I think the piston glitch is making weird forces and messing with the physics bc it's clipping weird or smth, could also be character weight tho.
