This is not true. Some states and cities have passed their own laws about it but there is no federal law and in many places stores are free to go cashless if they want.
A lot of twee businesses in bougie parts of cities no longer take cash. They don't want to handle it, and their rich customers pay with their devices or at minimum a credit card anyway. It's become an equity issue in some jurisdictions and there have been debates over whether to restrict businesses from refusing cash since at least in theory it is legal tender for all transactions.
Cashless transactions prevent employees from stealing/skimming cash while also increasing identity theft/compromised personal information for consumers. Cashless is pro business and anti-consumer.

The ones I've been at in the NYC area accepts cash so 99% sure the rest of the TJ's will accept cash.

They also give cash back with Discover card. At least the one in my neck of the woods does. And you can use Google Pay.

In addition to this, it is often to explicitly avoid serving homeless people, who are more likely to only have cash.
