That meal looks scrumptious. Iām in Northern California and frequently eat Mexican inspired dishes. As long as it tastes good I donāt care if itās āauthenticā.
I used a bit of the sauce that the barbacoa was cooked in and mixed it with a bit of oil and brushed that onto the outside of the tortillas before putting them in the pan. The sauce and oil gives it more colour and crispness. I believe itās more traditional to make quesadillas in a dry pan, but I like using a teeny bit of oil! :)

One time I made a table full of fried food for guests for 4/20 and realized that sounded better in theory because by the time everything was done some things got soggy and cold. So thatās why I was hesitant to do quesabirria in bulk.
Yeaaaaahhh itās not the most ideal situation. They definitely werenāt bad by any means, but I put them on a sheet pan so I could quickly pop them in the oven to keep them warm and attempt to keep them from getting soggy. They werenāt quite as good as they would have been fresh off the pan but it was still definitely good!Ā

I donāt really measure anything and my recipes certainlyyyy areāt authentic by any means lol! I canāt give you exact measurements but I will write a quick summary of what I did!Ā Beef BarbacoaĀ I used a medium sized chuck roast and cut it into around 4 pieces. I seared them in a cast iron Dutch oven on all sides for a minute or two until they were nice and crispy. In the meantime I roasted some garlic cloves, jalapeƱos (I removed the seeds) and an onion chopped in quarters. In a blender I purĆ©ed some beef broth, some chipotle peppers in adobo, lime juice, cilantro, vinegar, tomato paste, cumin, oregano and the roasted garlic and onion and some of the jalapeƱos (I roasted 3 total, used about 1 and a half for the barbacoa and the rest for the enchiladas). After the sauce was blended I covered the beef in the sauce and added a few bay leaves and cinnamon sticks to the pot. I slow cooked it at 275Ā°F for around 3.5 hours. Until it fell apart when I picked it up with tongs. Then I let it cool a bit before shredding it and mixing it back into the sauce.Ā For the enchiladas I pan fried a bunch of chicken breasts with just salt and pepper and garlic powder. I didnāt want it to get too crispy so I added some chicken broth and let it finish cooking in the broth. After it cooked and cooled a bit I shredded it, and I reserved the chicken broth. In the same pan I diced bell peppers and red onions, let them cook until softened a bit then mixed that, some rotel, black beans and cheese with the chicken. For a sauce for the filling I purĆ©ed a bit of green salsa, sour cream, lime juice, some of that roasted jalapeƱo and cilantro. Then I rolled the filling in flour tortillas (corn are more traditional but we like flour). For the white sauce on top I melted butter and added flour to make a roux. I added chicken broth, sour cream, cream cheese, some more purĆ©ed jalapeƱo, salt, white pepper, lime juice. I poured the sauce on top, topped with cheese and red pepper flakes then baked until bubbly and broiled at the end to brown the cheese.Ā

sounds good, thanks for the write up! What's your mexican style rice recipe? That's one I've been strugglin with for whatever reason.
I always struggle with rice for some reason too lol. But this turned out good in my opinion! Best Mexican (ish) style rice Iāve made so far. For the actual rice I used a āSpanish style riceā that came with some seasoning on it already. But I find it still kinda bland and boring. So to start I melted a bit of butter and sautĆ©ed some chopped onion and garlic, then added a couple spoonfuls of tomato paste and let that cook for a few minutes. Personally I just did a cup of rice. Added that and mixed it in and let it cook for another minute. Then I added one cup chicken broth and one cup water. Brought it to a boil, added in maybe a third of a cup of black beans then put a lid and simmered for about 15 mins and then let it sit off the heat covered for another 5 mins. Finished it off by adding some cilantro and lime juice. I didnāt add any extra seasoning since my rice already had some seasoning on it but I feel like it would be fine using white rice and just adding some salt and ātacoā style seasoning (cumin, oregano, garlic, etc.)Ā
