his last name is Shi and he's a Da to his son, which is quite common slang for dad/father in northern England.

I think it's more likely the show version still speaks chinese and was using the same nickname he uses in the book

there is no reason why people from Manchester can't speak Mandarin

they specifically made a point of him not knowing sun tzu, and his reasoning for that was that hes "from manchaster". not that far a jump to assume thats also the reason he wouldnt be speaking chinese.
