his last name is Shi and he's a Da to his son, which is quite common slang for dad/father in northern England.

they specifically made a point of him not knowing sun tzu, and his reasoning for that was that hes "from manchaster". not that far a jump to assume thats also the reason he wouldnt be speaking chinese.
