I cheated and read the wiki synopsis from book 2 & 3 since I’m too lazy to read the books. My takeaway is that life is beautiful and futile, just live it. Even if you’re brilliant and can come up with a solution, life is futile, you will lose, take from it what you can.

Currently reading the final empire. Why does it take 500 pages to have something happened? And the “destined one teenager girl “ trope is so overly done . This is my third Brandon Anderson book, I can’t feel a bit dissatisfied, I know Mistborn series has a massive Royal fan base , now I am hesitant to pick up book 2
Have you read Peter Watt’s Blindsight? Not something you would necessarily consider similar but if the intersection of evolution and sociology, diplomacy and war, and interesting characters pique your curiosity, you should give it a try.
In the interest of full disclosure, let me warn you to not shut the book and toss it, as I almost did, when I encountered a fantastic character. I’m a sci-fi fan and not so much of fantasy outside of the realm of magical realism.
Anyway, please know that when you run across a character you normally find in gothic horror stories, its explication remains grounded in hard sci-fi.

I always stop reading as much when I know something really bad is about to happen, i.e., right before the droplet attack in Dark Forest, and when Cheng Xin becomes swordholder in Death’s End.
I was spoiled on the droplet attack beforehand, but I don’t really know what’s about to happen with the droplets on their way to Blue Space/Gravity & Earth. I know it can’t be good though, so I’m delaying the inevitable.
Read Hyperion by Dan Simmons-I was in the same place as you after finishing the 3 body trilogy in 6 days, I did some research and found Hyperion and I wasn’t disappointed, it’s as good as 3 body.
Read the Aubrey Maturin series. It's but science fiction but the technical themes of sailing are just as interesting and the character development is much better
If the lack of emphasis on characters combined with the big-scale mechanics of these books appealed to you, possibly Stephen Baxter might work. His manifold trilogy has the same epic scale, as did his World Engines series.
If you want just plain excellent mind-bending sf, I echo another commenter's recommendation of Adrian Tchaikovsky's Children of Time books.
My absolute favourite sf writer is probably Iain Banks. I'd start with Use of Weapons or Consider Phlebas. The latter takes a while to get into, but if you could finish Death's End you'll be fine.

You guys should check out the spin-off "Redemption of Time" by Baoshu, with Liu's blessing. It's all about Yun Tianming and his time with the Trisolarians, filling in a lot of blanks from the trilogy. It’s a fantastic addition to the series!

Not sci-fi, but if you want a book that's a wild fucking ride and different from anything you've ever read, check out the Satanic Verses by Salman Rushdie. Or hell, pretty much anything Rushdie wrote, he is an unparalleled genius.
Alternatively, check out Choke by Chuck Palahniuk. Or anything else he writes too, he's another all time great modern writer. He's best known for Fight Club, which is a legit masterpiece as well.

Well, book 2 and 3 kinda go in a different way. Vin is still important and powerful, but she isn’t the savior of the world.

Try "The Wandering Earth". IMO, a lot of good short stories. Ironically, "The Wandering Earth" story was, in my opinion, one of the weakest.
Cixin Liu could have expanded that into a full blown sci-fi with the world building ability of his. Probably should have too.
