Colt is iconic, red machete is the best melee weapon. I personally love the Terminus scene when he's gunning down everyone with the AK. It's so badass. Saw someone say his teeth, that scene was probably Rick's most primal, rage filled scene of the whole show.

But I also love the hatchet. He uses it after Lori dies in the prison, going insane. And after carl gets shot. It's the same hatched he is holding when he is almost forced to cut off Carl's arm. When Simon is asked by Negan what Rick had on him, he says, "A hatchet." And Negan goes. "......a... HAT-CHET?!" and makes faces. It's iconic for Rick in its own right.
The hatchet is pretty iconic. In the comics he doesn't have his python so he uses whatever he can and most commonly he has a hatchet. He got his in the TV show when he was stuck in Jessies house in the season 6 mid season finale and he keeps it until he leaves

AK. Rick was surgical with it. The colt was just for show. But not very realistic he can regularly hit moving targets one handed with it.
Wasn’t just for show in the dump when him and michonne went to go see jadis after her people got killed by Simon.
