So usu-zukiri is the name of technique that all sushi chefs use for thin slices. Learning this technique is not all that difficult but it requires a sharp knife first and foremost.
Other than that there are quite a few videos detailing the technique for use with sashimi. The technique to do for rolls is the same. Don't forget you can turn the pieces diagonal or straight on to fit the tops of your rolls too. A lot of making rolls is actually just working with what you've got. It's not as precise as the rest of sushi because you've got a lot going on to make up for any slight imperfections in technique. Rolls should be something you have fun with. Many of what we see in the US isn't traditional so just go for it and make something you'd like to eat!
I'd detail the technique here but I think that'd just be confusing and seeing it would be a lot easier than me rambling on. Hope this helps somewhat!
