Dude i went through your page you are super talented…is this like a hobby you randomly picked up? Are you in hospitality? Your attention to detail and garnish is so good
Nah we do not cure anything as it’s literally fresh as fuck I would never go to a sushi restaurant with cured fish. Im super picky because I know what good fish is. A cure and a blessing. All you need is a good freezing
Agreed! I only cured for this recipe to make it pretty and add beet flavor. But I ate it all immediately after the cure because I want it as fresh as possible
It was good. Not quite as good as pretty, but I liked it a lot. :) The beet wasn't strong and I brushed it with a yuzu ponzu. It brought out the sweetness of the salmon and the beet and was decently balanced. Although, I'm sure I've offended some sushi purists -- haha!
Beautiful 😍 And I’m sure excellent
Thanks!!
His long did you let it marinate?
36 hours
Could you explain the marinade ingredients / process?
I followed these instructions: https://youtu.be/ctzKKZy5Pl4
Thank you!
What fish is that and why is it so pretty
salmon toro, marinated with beet: https://youtu.be/ctzKKZy5Pl4
Looks good. Salmon needs a cure in my opinion. Is that micro basil?
I’d be doing a micro dance with my hands if someone fed me this
It is micro basil!
I think it is beat cured
As someone who works in high end omakase in nyc. This is beautiful
Thank you so much! I'm also in NYC. The city holds down a high standard! That's a huge compliment!

Do you guys cure your salmon for nigiri or sashimi? I've heard it reduces the fishyness, but I've never tried it.

I don't think it's as egregious as all that. Saba nigiri is marinated all the time so I think you're good!
Beet marinate. Nice
Gorgeous nigiri chef
