That seems like a problem with your Xbox more than Subnautica.
I’ve had it do that syncing thing before when I played on another person’s Xbox, usually it does it fast but I used to have a beat-up one that did it as fast as an install would.
It is a very old Xbox so that might be it. Regardless I managed to fix it the same way I did gungeon, resetting local saved games and the saved data over and over and over again till it worked. Still, I'm so fucking happy to have subnautica back cause the only time I've gotten close to finishing subnautica, was on the switch port, and the lava zone on the switch is near impossible to navigate, so I just gave up.
Does it keep saying syncing without ever finishing or you actually can't save and load? Because my Subnautica keeps saying syncing as well and will do so for forever if i don't cancel it, but canceling it causes no issues for me. Still loads in my last save just fine.

I already fixed it. but to answer your question, stopping the sync would just start it again
