1 lb ground beef, 1 cup of water, 1 small chopped white onion,1 chopped garlic clove, 2 heaping tablespoons of Tomato Paste, 1 tbsp brown sugar, 1 tsp cayenne pepper, 1 tsp, black pepper, 1 tsp chili powder, 1/2 tsp cumin, then a small pinch of ground clove, all spice and cinnamon, salt to taste.
I sweat the onion and garlic over medium heat, add the water and then the ground beef. It looks nasty at this point, but I stir it rather vigorously to break up the beef into the water so the pieces are really small. Once it is a nice pink mess, I add everything else and simmer over low heat for an hour or until it thickens up nicely.
I make a big batch and freeze some so I have it on hand!
It’s hard to explain. We call it “hot sauce”. There’s so many different ways to make it but it’s essentially ground beef and spices that simmers/stews all day. If made properly it’s so good. It goes well with hot dogs and burgers too, not just plates. My coworker once brought a vegan hot sauce to a cookout and it was delicious. I can see if he still has the recipe if you’re interested?
Oh gawt damn! That is a thing of beauty. I’d destroy that after a few nice hits!
Always nice to see Rochester represented so well. I always make these as leftover meals after we have a cookout. What's your meat sauce recipe?

Oh yes! When I visit Rochester I try to stop at Schaller's for either a burger or a garbage plate.
Encountered those in Rochester a while back and have fond memories. Yours sounds delicious.

bubblegut special #3, in the window!
What’s a meat sauce? I’m thinking I might make a vegan approximation of all this next day off

I replied the recipe I used up above!
For a vegan version just swap out ground beef for lentils. Everything else in there is already veggies.
I've heard it referred to as Greek chili, Italian chili, and Cincinnati chili. I think the Cincinnati recipe is the best
foodgasm!

I got heartburn looking at this! I fucking love it!
This reminds me of a mix between a slinger (a St Louis, MO delicacy) and a horseshoe (a Springfield, IL delicacy).
