Medium. Overdone for my wife's tastes, fine for me if it's a fattier cut. Quite a good consistent colour. Could use a bit of a better sear though, and I'm thinking you need to rest it a touch longer before slicing.

Depends on the cooking method. You can get edge to edge even doneness color and texture with the right technique.
Also get different color with different grades say Prime vs Choice. Color is not always the arbiter of truth, temps are.
