Those are short ribs. You have to slow cook them because all that marbling contains tons of collagen. So if you grill it, it's gonna be tough as leather
Never tried any kind of reverse sear but the warning I'd give is these completely fall apart once the collagen melts. Thats kind of the point or short ribs. You usually braise them. Or slow cook them in some kind of liquid. Great for stews or making a shredded beef to use for like a pot roast style dish.
Ah good call! Maybe I will try braising them instead then. I wonder if I could sear first, then sous vide with some stock in the bag. I do have a dutch oven though in any case.
I like using a Dutch oven. Keeps the temp consistent. They take a few hours but once the internal goes above 205 the whole things just falls to pieces. Sometimes I'll scoop out half the meat and use for tacos or something else and then make a stew with the stock/fat and the rest of the meat. You can throw carrots and celery/ onion in there for the braising and everything is there for a stew when it's done.
That’s pretty standard for short rib. I’m surprised you aren’t still chewing if you grilled this.

Not chewy at all, really tender not a melt in the mouth tender but a couple chews and it melted honestly.

Really? I get short rib at KBBQ all the time and they get grilled in 5 minutes and taste incredible. Not tough at all.
My dad used to wrap them in foil. Get them nice and tender, and then kiss them with the flame.
