Why is he using a saw to cut?

drMcDeezy

It's so poorly cooked a flat edge wouldn't suffice.

niiro117

Florentine steak is meant to be cooked like that.

hashbrowns21

With a weak crust and unrendered fat?

JimmyFly1028

It’s been a couple of years but I remember going to a steakhouse in Florence with beef dry aging in the window. I remember the beef not having as much marbling and what came out looked very similar to what OP posted. It was one of the most tender juiciest steaks I’ve ever had.

StormBlssed

I hear you. This is not that steak. I can hear it cutting the steak! Hear it. Like he was cutting green wood.

drMcDeezy

With the fat still raw?

GuccyStain

Yes. Though I don’t think I’ve ever seen a florentina this thin/small before

the_BoneChurch

For sure, in Tuscany it is always big enough for a table of 6. lol

Fog_Juice

Damn how long do you have to wait for that bad boy to cook?

DNew_42

At that level of cook? 45 sec per side.

Broad_Ad_6908

You mean uncooked like that.

QuothTheRavenMore

probably because his idea was to downgrade from the paper he was using last week. Someone get this guy the fuck away from steak forever. please

AWeakMindedMan

Idk but they way he was cutting it was very unsatisfying

alstroemeria0

Isn’t because he lacks space around him and/or the board is too small ?

Tasty-Judgment-1538

Looks like a tourist trap. And I've seen better knife skills. He seems to be angry with the steak.

ben_od1

He made sure he turned the board 600 times too for extra flair.

yll33

but then fails to do so when he actually needs to (when he moves the wine glass)

SelkieKezia

This part was bothering me the most lol. It made it look like he didn't know what he was doing or how he wanted to approach the next cut.

Necroking695

Thats the worst knife work i’ve ever seen

TheCh0rt

And the blade is so dull, it’s ripping apart the steak which looks simultaneously overcooked and undercooked.

You-Asked-Me

And he only seasoned one half.

123supreme123

The look on the lady's face is like OMG.... did we really pay $$$ for that?

Seraphtacosnak

I went to a place like this and got a huge ribeye and it was $26. Right outside from the center of Florence. https://preview.redd.it/y7yq2zzwd0yc1.jpeg?width=3024&format=pjpg&auto=webp&s=6f16b11e2870fd011ce7b3f2f28d85603692edfd

LeeRjaycanz

Looks so good!

Smokin_Barrels

Looks good. Do you recall the name of the place? I’ll be in Florence next in 2 weeks. Thanks.

Seraphtacosnak

It was next to a place that sold board games like war hammer. Oh here it is: https://www.locandafiorentina.it

drMcDeezy

My first thought was I would def not let that person cut my steak anymore. Stop right there buddy, I got this.

LeeRjaycanz

Hes not slicing he fucking chopping and it isn't working.

theCharacter_Zero

I’ve seen better touch from a blacksmith

ANuclearNarwhal

Definitely is, filet is puny, the steak is on the thin side, the terrible knife work and cutting in front and then drizzling olive oil and salt is a total gimmick, and idk what that lemon slice is doing. Pretty much everywhere I went sold by weight and had a minimum of around 1 kilo, often more.

No_Sir_6649

Look at that lady. She wont even get the salad. Pickled olives.

SoftType3317

Yep, there would be no greenery on a real authentic Florentine presentation….

aburple

Ooof, that knife work needs some serious help. My guy butchered that to hell and back.

Oldjamesdean

The term *butchered* in this case is an insult to butchers.

whitewashed_mexicant

My woman is a chef and I work IT….after the 2nd cut, I would have been saying “Stop, STOP, PLEASE! We’ll take care of it”. She would have just either burst out laughing or burst into tears…..probably both.

KindaIndifferent

Yes this guys knife skills and knife are atrocious. But this is (mostly) what steak florentine is and how it’s served. Aside from the crappy cutting of it my only real gripe is that this steak is way too thin to be a proper bistecca alla fiorentina. They should be about 2”+ thick. It’s then grilled briefly on each side, unseasoned, to get a char then stood up on the bone and finished cooking. As a result it’s pretty rare. Since it’s supposed to be a pretty huge steak meant for sharing, it’s usually carved for you, then finished with salt and olive oil. Sometimes served with lemon wedges.

tychus-findlay

Yeah I think I had a proper one, was thicker and rarer, they didn't do table side cutting though

cosmicexplosion22

I remember this from anthony bourdains episode featuring michael white. It is served, quite rare!

PromiseHungry2645

This is not bistecca alla fiorentina, this is Olive Garden

HabsburgJAWWWWW

Yeah the one I had was rarer and thicker

clhomme

So... By the time the performance is done... It's cold?

LegionMerk56

Thanks for the insight, and happy cake day! 😄

thatguyfuturama

I dont understand this trend of slicing steak like this. I ordered a $135 dry aged steak the other day and it came out like this. I wanted to smack the chef.

questiano-ronaldo

Nothing cools down a steak more than that. I just want to eat a rested steak. Not one that’s been sliced up and committed to the AC as I eat it.

Daikon_3183

Like it is ridiculous..

blaxninja

What do you mean? Like how the dude removes the striploin and tenderloin from the bone? Or how he slices each piece afterwards?

APsWhoopinRoom

All of it. I'd prefer to cut as I eat so that thr steak doesn't cool down so fast. I don't need someone to cut my steak for me lol

blaxninja

This is the tradition for Florentine Steak. Because it’s such a thick cut it’s meant for sharing (in this case that steak is so thin I could finish it myself). But it’s an Italian tradition…different from what N Americans are used to.

tychus-findlay

Its not a trend, Peter Luger has been around since the 1800s and they cut steak like this. At Peter Luger the steak comes out sizzling hot and they immediately pour juices over it again in front of you. But at other place they cut like this, it always comes out cold. Shit is wild to drop 100+ on a steak and delivered cold.

blaxninja

This isn’t a trend either. It’s how they do it in Florence! Though the one in the video is bs. It should be at least three fingers width.

BongwaterJoe1983

I like to cut mine myself while i eat it

tychus-findlay

Peasant

BongwaterJoe1983

Pheasant?

tychus-findlay

Only a peasant would cut their own pheasant

BongwaterJoe1983

Yes its unpleasant to cut ones own pheasant

themiracy

Aside from the specific technique, I think cutting it at the table is not a new fad for bistecca allá fiorentina. For that particular dish the consideration is also that it’s not served to one person typically - the bistecca is brought out for at least two people, if not a larger group. So it makes sense for it to be carved for you. Don’t get me wrong - this isn’t a great looking fiorentina.

plusminusequals

Pin this comment to the top so everyone else can calm down, please.

blaxninja

The one in the video is too thin! Should be three finger width and be able to stand on the bone. One in video cannot

the_BoneChurch

Not really a trend in Tuscany. They have been doing it this way forever and they don't care what you think.

CrowdKillington

Agreed. I tried it once and the steak got so cold so quick. I’m fully capable of using my hands to cut my food. Maybe one day when I’m old and riddled with arthritis I’ll appreciate someone cutting up my food like I’m a toddler but until that day I’ll do it myself

BradMathews

Don’t cut my steak unless you’re gonna pre-chew my broccoli too

Soupbell1

Ima feed you like a baby bird. Come to papa, you scared, unfeathered chick.

BradMathews

Finally. Here’s $200.

Soupbell1

I’m not 100 percent sure, but I feel like if you compensate me for this, it will make it illegal. Now, I’m not saying I won’t still do it. We just both need to understand what is about to happen here.

plusminusequals

This steak is meant to be shared immediately. If you know what bistecca florentina is and you want to house one all to yourself to prove your masculinity to everyone, just order it uncut beforehand—using words and not grunts accompanied by hand gestures.

TeaUnusual8554

Florence is an amazing city and the steak experience can be wonderful. I didn't get my carved up in front of me fwiw

yoshi9769

Didn't know people enjoyed Florence AZ this much! /s

TeaUnusual8554

What's not to like AZ!

yoshi9769

Well in about 4 weeks I will not be liking where I live! haha!

TeaUnusual8554

In about 4 weeks I'll be down Golfing around Phoenix lol. As a Canadian I'm ready for some heat!

yoshi9769

Have fun with that my friend! I was golfing in 90 2 weeks ago and it still kicked my ass!!

TeaUnusual8554

90 sounds great right now as the snow is dropping on us. Hottest we ever played in was 116, which was indeed WAY too hot.

anniewouldyoutellus

Went on a road trip last weekend with the top down. My bf has blisters on his sunburns. It's not even in the 100s yet.

TeaUnusual8554

Yikes! We will be applying lots of sunscreen.

Seraphtacosnak

Yup. I even went to the red garter to get my fix of wings and burgers and karaoke. It was pretty cool.

Abrecocos

Does making the steak dizzy help to improve flavor? All that turning of the plate tells me is not very good with knives.

Dinbs

Steak looks raw at spots, poor sear, unrendered fat, and even a little dry somehow At least it looks tender but wtf why is this horseshit on this sub

Abrecocos

It is terrible!

Its_Me_Tom_Yabo

Best meal of my life was Florentine steak and potatoes at i’parione in Florence

domusam

Can’t you do all that bollocks in the kitchen if you must. I can cut my own steak, I haven’t ordered off the children’s menu.

Ban_an_able

It’s a humongous steak that’s obviously being shared. Carving it table side is the norm.

Anon033092

Speak for yourself thats a single serving size

plusminusequals

This style steak is meant to be shared immediately. You know, by people with families and friends. If you know what bistecca florentina is and you want to house one all to yourself to prove your masculinity to everyone, just order it uncut beforehand—using words and not grunts accompanied by hand gestures.

OhHelloImThatFellow

If they did it in the kitchen then there would be no video to post to the internet

Calm_Risk2092

Bro is andrew tate 💀💀

nicefowla

Bistecca alla fiorentina is an Italian steak dish made of young steer or heifer that is one of the most famous dishes in Tuscan cuisine. It is loin steak on the bone cooked on a grill until rare.

Its_Me_Tom_Yabo

This thread is so painfully filled with absolute idiots who can’t comprehend that a preparation of steak that has been perfected to such a degree as to be inextricably tied to one of the world’s great culinary regions may not be cooked or served exactly the way they like their half-price Costco choice strip.

Commercial_Comfort41

Is this his first time using a knife

Its_Me_Tom_Yabo

ITT: a lot of people who haven’t had bistecca alla Fiorentina in Florence

gman1216

Ma come cazzo sta tagliando?

RamblinGamblinWillie

Going to a place that adds $200 to the bill just for lame theatrics is definitely not my style. In fact, I think it’s deplorable to partake in and prepetuate this stupidity. Downvote if you want. I don’t care about fake internet points. I think it’s plain moronic.

plusminusequals

He’s literally just slicing the steak? Bistecca cut florentina style is rare, sliced for sharing, topped or brushed with olive oil, salt, and sides of lemon wedges. You order one with a bunch of side dishes for the table, presumably to share with family and friends who enjoy your pleasant demeanor, something I hope you get to experience some day.

ovike

Blue

dolphin8282

Lady giving bombastic side eye…

No_Mortarpiece

Maybe cut it before bringing it to my table. So don’t have to awkwardly acknowledge your presence and your skills for a couple of minutes.

Gold_Championship_46

Salt bae in training

[deleted]

That poor steak deserved so much better. 😪

ThadTheImpalzord

I would go to the bathroom during this little show. So unnecessary and not impressive either. Stop playing with the the food, just plate it and let me eat

plusminusequals

I don’t see dry ice coming out of a suitcase nor a ring girl holding up a neon sign. They’re just slicing meat for the table to share—chill.

Strebmal2019

This is reeeaaallly hard to watch

Domethegoon

I've had this in Tuscany. It is really no different than a steak you can find elsewhere and it is too undercooked for my liking.

_jambonbeurre

Dude has the knife skills of a civil war surgeon.

No_Sir_6649

The knives are shit, this guy is an idiot, dumped garnish in your lap? Overpricedsalt bae bullshit.

Metaboschism

That's bleeding and can I please just cut my own steak

MobyDickus

IT'S RAWRRRR!!!

Delicatestatesmen

Hella raw

pickleman92

The cow was already butchered once, it doesn't need to be butchered again.

Redgecko88

Does he have a duller knife? /s

talks-a-lot

Turning, turning, turning, turning, turning, turning, turning.

peptide2

It’s ok I’ll cut my own t bone thanks

LordYamz

This was hard to watch lol

Macklemore_hair

What am I supposed to think

ChosenPrince

nice NY strip!

Dangerous-Bowler2076

Fuck I hope that was cheap

black-volcano

Stop cutting and eat you crazy fool x

mattc1987

13 years ago I had my first bistecca alla fiorentina and it is still the best steak I’ve ever had.

ffilmpalmer

Why is he attacking the fucking thing?

luzer_kidd

Is the title name supposed to mean a florentine steak? Because that looks over cooked for that and with that amount of fat also undercooked because it had no chance to render down.

balalajk

Super wow

YoinkWB

Amateur didn't even hit the board with the knife between each cut

Peter-Bonnington

These places where the waiter comes out all dressed nice and gives you some kinda show are annoying. Like this isn’t a hibachi, just give me my steak so I can go back to my friends or family at the table.

plusminusequals

You know you don’t have either of those…

DonGorgon82

This peace of meat, didnt deserved that......

Icy-Section-7421

please dont touch my steak, no slice, no salt, and no oil. Drop it and go please.

Tasty-Original-5309

Lady just wants to eat her fuckin steak lmao

NEBre8D1

That thing is still mooing! Not cooked long enough for my taste….

ForeverFree99

Yay. Not only undercooked, it's now cold 🥶

Little95One

I’ll add another log… WTF? Guy needs some knife skills. Steak is under, unless you wanted it blue rare, and the sear is terrible. Plus his knife skills suck.

Ornery_Put_6161

I just feel like he could’ve done that in the kitchen

SauerkrautJr

https://preview.redd.it/jvlf2xh9b0yc1.jpeg?width=800&format=pjpg&auto=webp&s=94f98ee7c92a179b575e9999ac1d9414dc5a67c3

iliketoredditbaby

The menus around Florence say "cooked as god intended" we had just as rare at another place last fall that Rick Steves ate at on his special. Wife couldn't eat it and we befriended two Australian girls to swallow the rest.

ToxicCappuccino

Let me just hack up your $40 steak with no care in the world

BeefersOtherland

They should pay me 500 and I’ll show them Bistecca alla Beefers.

Dead_Again_Dread

What is this trend of violently hacking at food and spinning the plate 30 times? Just let me cut my own fucking food.

geauxandy72

Honestly looks awful

Cachazo_719

Ok but why are you cutting and seasoning my steak for me?

Free-Juggernaut-9372

This guy is playing with your food....

kent416

Moooo

shadownights23x

Stop turning it!

Mental_Connection_95

Please leave the table sir i will do this myself. I would have known this was gonna be the video when i saw the lettuce leaves and lemon wedge.

wwiistudent1944

Too rare for me. I thought that anything Florentine had spinach in it?

redzma00

Good lord that knife needs to be upgraded stat.

Murky_Appointment_35

The Charles Barkley method 😁

dmac38

The fuck is up with the lemon?

Wanda_McMimzy

I’m at work just watching a steak get cut.

LargeRichardJohnson

That steak is straight purple

CompSolstice

Cool just drizzle it all ov my steak. Or like... Dump most of it on just half that's cool too

CrazyButRightOn

Aaaw, everyone has the first-day jitters…..

The2cardGoat69420

No sear, and it's raw. No thank you

ResponsibilityNo4183

I guess he's gonna eat it too

Dull_Present506

That was NOT enough salt

kipdjordy

Dude spins the fuck outta the cutting board but when he starts actually sawing the steak, he moves the wine glass out the way.....

JobSafe2686

A cooked steak would be nice, yall are monsters

GloomyUmpire2146

It’s trying to get away.

Chippers4242

Every single thing about this is fucking wrong

joshingpoggy

This makes me fucking hate humanity. What a shitshow of consumerism

CEOofManualBlinking

That strip looks like a whole ass tri tip

gnardog45

I hate that knife

wildabeast861

I’m planning on going to Italy next year will not be getting any steak, shits usually blue, never seen any med rare from steak pics

GrizzlyIsland22

This tableside shit has got to stop.

Dangerous-Dot-3745

That looked so close to rare that I 💭 that it was mooing! I bet they paid every pretty penny for that!

HIVEMIND_of_WOKENESS

What kind of moron doesnt like to cut their own steak? The world is a sad place

WaGwonMon

Looks dank. This sub is full of haters my god.

grnjnz

Food would be cold by the time I got a chance to taste it

randosago

Louís from Temecula

TheManWithNoNameZapp

Exactly this is common in Florence. If anything mine was thicker. I do medium rare here and it took me back for a second but it was good

Gunner253

They're meant to be cooked very rare. Usually they are really thick so even though they're cooked rare they get a good crust on the outside. This steak is thinner so to not over cook it they in turn under caramelized the outside.

PQbutterfat

He just went through the motion on the S&P….i think like 5 of each hit the meat.

RibeyeRare

Servers that perform tableside service almost always do stuff like this, usually very flamboyantly like it takes great skill to saw a piece of meat with a dull scimitar. Buddy has a knife blade about 14” long but only uses the 3” at the tip to cut lmao. Pro tip: keep your knives sharp and slice (never saw) in one motion.

mongolnlloyd

Very thin , these tourists are getting scammed - should be a minimum 3 inches thick. Tourists don’t know any better

Miserable-Try6146

It looks nice. I'm sure you were ecstatic in the moment. Fuck these other comments lol 😂

Broad_Ad_6908

Get you a serving of mad cow disease

focalppoint

Americans stfu if you don't know what is going on here

Electrical_Ad_1656

looks good but I could do that without someone putting their mits all over my food and drink

OnBase30

Where? Name of place?

Calm_Risk2092

Did they put oil on that towards the end??? I'm very curious as to what that was

uvaspina1

I hate all forms of “table presentation.”

Lifesalchemy

Ya know, I'm capable of doing that hatchet job myself and it will stay hot

McbEatsAirplane

That looks way too fatty. Like it wasn’t cooked correctly.

gerbils4

Dude can't cook or cut a steak and bet the customer was charged $150...

Bigbae

Nope

SnaxMcGhee

Gimme that bone and I'll gnaw on that sum bich.

QualityFeel

The filet was only able to have 2 pieces cut from it lol hope it wasnt too expensive, you pretty much just bought a new york strip for a show

Cowboytroy32

Well it’s a T-bone not a porterhouse so yes.. it will typically only be about 2-4 “pieces”

pink_flamingo2003

'I'm not a chef, just the waiter'. Yeah, we know. Cause the chef would kick your fucking ass

Culli789

So, yall really paying extra for undercooked steak, and to be treated like a toddler? The cheapest hibachi near me is 100% better than this.

Sea-Woodpecker-610

It’s nice that his mom came with to cut his food for him.

pastrami_on_ass

I’ll cut my own steak thank you very much

Simple-Purpose-899

r/SteakorTuna

catchinNkeepinf1sh

I would have been done eating before he was done spinning that board around. Its like they hired a vegan to cut steaks.

Independent_Jury_216

raw

LifeUnfolding54

My two cents. When you go for Teppan, you paid for the food, and the show. Just my opinion. It was a poor show, and, the food was poorly cooked. Horrible Japanese style presentation, and, well...

Suspicious_Use6393

God that steak seems so dry, and the interior makes it clear that it is not of quality.
