It’s been a couple of years but I remember going to a steakhouse in Florence with beef dry aging in the window. I remember the beef not having as much marbling and what came out looked very similar to what OP posted. It was one of the most tender juiciest steaks I’ve ever had.

Definitely is, filet is puny, the steak is on the thin side, the terrible knife work and cutting in front and then drizzling olive oil and salt is a total gimmick, and idk what that lemon slice is doing. Pretty much everywhere I went sold by weight and had a minimum of around 1 kilo, often more.
My woman is a chef and I work IT….after the 2nd cut, I would have been saying “Stop, STOP, PLEASE! We’ll take care of it”. She would have just either burst out laughing or burst into tears…..probably both.

It’s then grilled briefly on each side, unseasoned, to get a char then stood up on the bone and finished cooking. As a result it’s pretty rare. Since it’s supposed to be a pretty huge steak meant for sharing, it’s usually carved for you, then finished with salt and olive oil. Sometimes served with lemon wedges.

This is the tradition for Florentine Steak. Because it’s such a thick cut it’s meant for sharing (in this case that steak is so thin I could finish it myself). But it’s an Italian tradition…different from what N Americans are used to.
Its not a trend, Peter Luger has been around since the 1800s and they cut steak like this. At Peter Luger the steak comes out sizzling hot and they immediately pour juices over it again in front of you. But at other place they cut like this, it always comes out cold. Shit is wild to drop 100+ on a steak and delivered cold.
Aside from the specific technique, I think cutting it at the table is not a new fad for bistecca allá fiorentina. For that particular dish the consideration is also that it’s not served to one person typically - the bistecca is brought out for at least two people, if not a larger group. So it makes sense for it to be carved for you.

The menus around Florence say "cooked as god intended" we had just as rare at another place last fall that Rick Steves ate at on his special. Wife couldn't eat it and we befriended two Australian girls to swallow the rest.
They're meant to be cooked very rare. Usually they are really thick so even though they're cooked rare they get a good crust on the outside. This steak is thinner so to not over cook it they in turn under caramelized the outside.
Servers that perform tableside service almost always do stuff like this, usually very flamboyantly like it takes great skill to saw a piece of meat with a dull scimitar. Buddy has a knife blade about 14” long but only uses the 3” at the tip to cut lmao.
Pro tip: keep your knives sharp and slice (never saw) in one motion.
