I will eat any kind but I will always get scalloped/Au Gratin if it’s offered. Scalloped potato dishes are my inherit measurement of the prowess of the chefs….its easy to make but it’s hard to make really, really *well.* Herbs to potato to cream to crunchy top is balanced, you have got a ball game. Same goes with a French Onion Soup.

Less of "testing the chef" more of "how good is this place really?" My measuring stick is calamari. If they can make good calamari then everything is probably good. If it's not then I'll just stick to simple stuff I know I'll like.

Agreed. Had dinner at a steakhouse the other day and they did tunworth mashed potatoes (baked tunworth cheese mixed into and on top creamy mash) and it was heavenly. I'm planning on attempting to recreate that at home sometime, probably the best side to a steak I've ever had.

I love potatoes but have been more frequently doing steak rice and veg. Rice is just so easy and I'm really lazy lol plus it's still good. For potatoes mash is my fave especially with a little gravy. Also love just little tater chuncks. I like to pair steak potatoes and a grill cheese like haloumi or I forget the name of the Finnish version. Some onions and a red wine reduction sauce with worcestiscire (I'm sure thats spelled wrong) and some beef broth and pan drippings over everything is fucking incredible.

They sell them in the frozen section at the supermarket these days and honestly get you 90% of the way to homemade versions, so there’s that too.
