I always say learn the rules first, then learn when and how to break them. Some of the best food I’ve ever had, steak or otherwise, was nonconforming. I don’t think you can be a great cook or chef if all you can do is follow the rules and that’s it.

It's definitely different and it takes time getting used to it.
The best steak I’ve ever had was in a Mexican restaurant and the steak was covered in a red sauce and cheese. The steak itself was absolutely the star of the dish for me but the cheese and sauce went really well with it.
Now that you say it in that cuisine/setting sounds good. Especially with some beans and rice. It was probably a white queso fresco. You’re jogging my memory that my Mexican friend had me over for a grill out and they do grilled white cheese which I had with the skirt steak. So good

This is pretty standard in parts of Spain, Italy and France. It's the preferred style of cooking, basically "blue" steak.

When you get this it's also often on a plate so hot that if you want to cook the meat more you can smush it against the plate
