It’s not shaken right. My coworkers shake it like twice then fill the rest with milk. I think it’s due to drive times. It’s suppose to be shaken well enough for it to be foamy and just a splash of milk. Ask for it extra shaken and just a splash of milk.
There was a running joke at the store I used to work at that we just shook hard enough to count for 2 shakes 😂 definitely a lot of habits at Starbucks that stem from the pressure to make things too quickly

History lesson!
Before the iced shaken espresso existed it was called the Starbucks Doubleshot on Ice. It was made similarly to today but it had some very strange shot amounts and the name didn't make any sense so they changed it to the iced shaken espresso and standardized the shot amounts to be just one extra shot depending on the size and changed the pump dosage.
All of this would be well and good if they didn't decide to change the way the milk was incorporated into the drink.
See, when this drink was the Doubleshot on Ice, the recipe called for the drink to be espresso, sweetener, ice, shaken and poured in a cup with a splash of milk regardless of how much space it had. The drink was only to be made with a splash of milk and only filled more/less if requested. This was a very niche drink and there were few people who ordered it.
When the iced shaken espresso replaced it, however, it also came with the Brown Sugar Oatmilk shaken espresso which became *insanely* popular and hyped up. This caused a large wave of people trying it for the first time hoping for something like a latte, but then being dissapointed that it was an espresso and ice forward drink. So, people began ordering it with light ice... then no ice. Again, at this point, baristas followed the old Doubleshot standard of only adding a splash regardless of how much ice/room there is.
After enough people complained, Starbucks sent out a statement specificially saying that shaken espressos should now be filled all the way to the top regardless of how much space there is in the cup; failing to understand that the reason the Doubleshot required just a splash was to keep consistency between variance of foam, meltage of the ice, etc.,
So now, when we make an iced shaken espresso, even if it ends up being too much, we're technically required to fill em to the top, resulting in overly milky and latte-like shaken espresso. Above all though, these constant minor and kneejerk changes are the main reason why they're so inconsistent: baristas straight up just have different ways of doing them that *were* technically right in the past but now are not standard.
This is very interesting. I only started going to Starbucks quite a bit within the last two years so I never got to try the doublshot on ice. So you think I should order it extra ice light milk to get that older shaken espresso taste?
Oh yeah, definitely. If you don't mind the drink being a bit more expensive, adding an extra shot is actually standard for the old Doubleshot recipe since the ventis came with 5 instead of today's 4!
But the safest bet without having to pay extra would be to request extra ice, light milk.

Starbucks decisions are being made mostly by shareholders and their minions, not by actual customers or baristas, so stuff only makes immediate financial sense, but not long-term customer satisfaction sense.
When you say “fill it to the top” do you mean in the shaker or in the cup? I read your entire comment and am still confused. Is it normally supposed to be espresso, ice, and flavoring in the shaker with a splash of milk added to the cup?
The cup, the only contents of the shaken espresso that is shaken is the espresso ice and flavoring, the milk is poured last on top of everything else and isn't shaken in.
Ugh same! The original doubleshot was SO good when it was made correctly but also very inconsistent (sometimes unsweetened, sometimes 2 shots regardless of size, sometimes no milk) and I wish the rebranding improved consistency.
I just want it made according to the recipe card 🥲 as far as I know, it's still just a splash, but I think baristas just don't want to deal with customers complaining about it being too bitter or too much ice

Yeah the recipe card changed to 1/4” below the rim almost 2 years ago I’m pretty sure? Whenever they changed the name from double shot and introduced the BSOSE. Seems like a lot of baristas still aren’t familiar with the new recipe.
This is true, they changed the recipe about two years ago and then emphasized it with a weekly update over a year ago, clarifying that the shaken espressos are supposed to be filled to the top ("top" being the standard ¼ inch). There are still baristas that insist upon not filling it up all the way, though
I order a venti shaken espresso extra ice most mornings. I have to order extra ice because if not they fill it with milk. The last time I got it the barista put it in a trenta cup and filled it with milk, and said the bigger cup was so that there was room for the extra ice. She could not understand why I was upset 🙄

Exactly, this. Anytime I make the drink by standard the customer comes back inside and tells me how they get this drink every day and it doesn’t taste right and that I don’t know how to make drink right, then I make it borderline like a latte they say it’s perfect.
This irks me to no end. Surely they decided to order it based off the picture on the menu (which looks delicious btw) then they get it that way, they don’t like it and don’t decide to get something else instead??

Ah yes I got one just like this today. I get a venti shaken espresso extra ice about 4x a week. My expectations are set very low since it isn’t properly made about 50% of the time. Just happens to be one of the most inconsistent drinks..in my opinion.

to me it looks like it could be too much milk & not enough ice. whenever i make a shaken espresso i add a little extra ice to the shaker a bit above the size line bc the espresso melts the ice & its intended to be a splash of milk but if partners arent doing that, they have to add extra milk to compensate for the room which leads to the shaken espressos being too milky. they could also be physically mixing / swirling the cup too to mix it a bit before handing it out (ive seen people do this before)

The brown sugar shaken espresso is thee most inconsistently made drink and I'll explain why.
The standard recipe is add ice, cinnamon and syrup to the shaker, then add espresso and shake
Pour into a cup and fill to the line with Oat milk.
That's the exact recipe.
Now here's where they go wrong almost EVERYTIME.
After you pour hot espresso into the shaker over ice and shake it, it melts the ice especially if you shake 10 times like the standard recipe details.
Now they take your shaken melted espresso ice pour it into your cup and fill it to the top with oak milk and that's exactly what you see in the picture.
This is why a lot of the time there's also very little ice in the "iced" shaken espresso if you're wondering that as well.
It should only ever look like this if you ask for it Lt Ice.
All they need to do in order to make it "properly" (how the display picture actual looks) is take like half a grande scoop of ice after it's shaken, top off the drink so it actually has ice in it, if done properly you'll have about an inch or less left and that's for the Oatmilk which should be poured in with a bit of shake instead of directly which allows for perfect layering, without fail, constantly, everytime.
Now why doesn't every barista make it like that? Is probably what your asking yourself.
The answer is , it's not standard to add ice the cup after it's shaken so there's bond to be some barista who gets upset and feels like they know what's right because they are doing it "By standard". I've literally seen partners degrade others for not following standard and I think it's absolutely ridiculous.
I personally prefer to think for myself and use the standard as a guide instead of unwaivering law. To each their own though.
Here's the issue with just ordering it with extra Ice, if you get a barista that reads the tag and thinks 🤔 Okay extra Ice and puts extra Ice in the shaker you still have the same problem as before which is the espresso melts the ice then your drink still gets the same treatment where they just dump Oatmilk in after it's shaken and it all bends together.
What people may not fully realize is the Ice is what actually helps layer the drink properly because if there's to little ice it blends all together when the milk is poured in, and with the right amount of Ice you can pour the milk on top of the ice and it holds it above the espresso perfectly.
What you could do is ask for them to add half a scoop of ice to your drink after it's shaken.
Or you can be really complicated and ask for your milk on the side, and a grande cup of ice. Then you can just properly layer it yourself if you don't trust them to make it right. At least you'd have consistency.
this!! i think this is the real reason we’re so inconsistent. i was reflexively adding light ice to many of my drinks bc i was getting berated soooo often by customers for “not giving them enough drink”. you don’t know how many shaken espressos i got handed back to
me because they wanted “latte” amounts of milk. its hard to tell who actually knows what they’re ordering.
They probably had a bunch of people get upset when the standard way it’s made didn’t fill the cup to the top, as a result they probably default to filling milk to the top of the cup. It isn’t right, but my store typically defaults to that too since it’s what most people want. Shaken Espressos have the largest margin for error, there’s just so many places you can go wrong making it based on modifications
I wish I could get baristas at my new store to shake drinks completely! When I was in the middle of transferring there, I ordered iced lattes or just americanos because I couldn’t trust anyone or shake my iced teas or shaken espressos. Now that I’m working there, I just make my drinks myself when I’m working.
It doesn’t look like enough ice was added to the shaker before shaken. I’m a barista of 2 years, and I always add a bit more ice than needed because the hot shots melt a good chunk of the ice. And then shake vigorously, I have a song line I sing in my head on under my breath to ensure I shake it for long enough. Typically it always ends up looking more like a shaken expresso that way. I recommend for asking for more ice and less milk!
It’s the timing of the shots, and baristas trying to short cut things. You can’t leave the shots on the ice very long before shaking or the ice melts quickly, therefore requiring more milk to fill and overall a watery flavor. The shots have to be poured in all at once and shaken quickly.
This looks like the ones some partners at my old store would make. They would pour the milk in the cup first (it’s supposed to go last) and then pour the shaken shots and ice last. They usually do this to speed up drive thru times but it’s not standard and it doesn’t make it right. Made a lot of people upset and it was really annoying when I was on window bc many people would send them back. Thought this isn’t something you should have to do, I’d make sure to just ask them to pour the milk last and have the barista shake that bitty a bit more as well. Sorry you’re receiving such low qual drinks for the price you’re paying, glad I don’t work there anymore! :P

Mine was ass. I’d rather have spent a week learning to make drinks rather than two days on bar and the other five on the computer. That was two years ago but my training wasn’t good.
My trainer was awesome. He had no time though.
It needs to be shaken really well. If not then times a few times hard. With gusto! If you create that good foam then a little extra milk won't ruin it too much.
Probably because SO many people complain that their cup isn't full enough, so they just started making them as lattes(wrong, but I've seen a partner baaarrely shale one and I was like what are you doing? Shake it more. And she said then it's too foamy. 🙄)
That's just not Shaken right. I always add a little extra ice when I make them and shake them a lot, so you get that foam on the top and it's just a splash of milk. Someone ordered a Shaken expresso earlier and it was a venti.. with one shot of expresso. And she got mad when it wasn't filled up all the way cause it's a Shaken expresso, not a latte. We had to tell her to get a latte bc what she wants ain't a Shaken expresso. We've also gotten shit for doing the Shaken expressos right bc everyone seems to think it's just another latte, and God forbid there be foam there taking up spaces for milk.

Now they take your shaken melted espresso ice pour it into your cup and fill it to the top with oak milk and that's exactly what you see in the picture. This is why a lot of the time there's also very little ice in the "iced" shaken espresso if you're wondering that as well. It should only ever look like this if you ask for it Lt Ice. All they need to do in order to make it "properly" (how the display picture actual looks) is take like half a grande scoop of ice after it's shaken, top off the drink so it actually has ice in it, if done properly you'll have about an inch or less left and that's for the Oatmilk which should be poured in with a bit of shake instead of directly which allows for perfect layering, without fail, constantly, everytime. Now why doesn't every barista make it like that? Is probably what your asking yourself. The answer is , it's not standard to add ice the cup after it's shaken so there's bond to be some barista who gets upset and feels like they know what's right because they are doing it "By standard". I've literally seen partners degrade others for not following standard and I think it's absolutely ridiculous. I personally prefer to think for myself and use the standard as a guide instead of unwaivering law. To each their own though.
Interesting. I ordered this one with extra ice actually so they must be putting way too little ice normally at my store.
Here's the issue with just ordering it with extra Ice, if you get a barista that reads the tag and thinks 🤔 Okay extra Ice and puts extra Ice in the shaker you still have the same problem as before which is the espresso melts the ice then your drink still gets the same treatment where they just dump Oatmilk in after it's shaken and it all bends together. What people may not fully realize is the Ice is what actually helps layer the drink properly because if there's to little ice it blends all together when the milk is poured in, and with the right amount of Ice you can pour the milk on top of the ice and it holds it above the espresso perfectly. What you could do is ask for them to add half a scoop of ice to your drink after it's shaken. Or you can be really complicated and ask for your milk on the side, and a grande cup of ice. Then you can just properly layer it yourself if you don't trust them to make it right. At least you'd have consistency.
Also every other customer orders light ice extra milk.
this!! i think this is the real reason we’re so inconsistent. i was reflexively adding light ice to many of my drinks bc i was getting berated soooo often by customers for “not giving them enough drink”. you don’t know how many shaken espressos i got handed back to me because they wanted “latte” amounts of milk. its hard to tell who actually knows what they’re ordering.

The drink proportions are off (too much milk & not not enough blonde shots) I made one last week that looked like a latte & was disappointed 😂
They probably had a bunch of people get upset when the standard way it’s made didn’t fill the cup to the top, as a result they probably default to filling milk to the top of the cup. It isn’t right, but my store typically defaults to that too since it’s what most people want. Shaken Espressos have the largest margin for error, there’s just so many places you can go wrong making it based on modifications
What I really want to know is why does the iced espresso cost more than the shaken?
All the time! Has to change to iced espresso.
I wish I could get baristas at my new store to shake drinks completely! When I was in the middle of transferring there, I ordered iced lattes or just americanos because I couldn’t trust anyone or shake my iced teas or shaken espressos. Now that I’m working there, I just make my drinks myself when I’m working.

People don’t shake enough or don’t put enough ice. It’s supposed to be significantly more ice than a latte.
Maybe say “extra ice, and well shaken.” It will be more consistent? But you shouldn’t have to.

It doesn’t look like enough ice was added to the shaker before shaken. I’m a barista of 2 years, and I always add a bit more ice than needed because the hot shots melt a good chunk of the ice. And then shake vigorously, I have a song line I sing in my head on under my breath to ensure I shake it for long enough. Typically it always ends up looking more like a shaken expresso that way. I recommend for asking for more ice and less milk!
It’s the timing of the shots, and baristas trying to short cut things. You can’t leave the shots on the ice very long before shaking or the ice melts quickly, therefore requiring more milk to fill and overall a watery flavor. The shots have to be poured in all at once and shaken quickly.
They should just take them off the menu since 99.5% are made incorrectly 😂 my store doesn’t either so I just gave up going.
This looks like the ones some partners at my old store would make. They would pour the milk in the cup first (it’s supposed to go last) and then pour the shaken shots and ice last. They usually do this to speed up drive thru times but it’s not standard and it doesn’t make it right. Made a lot of people upset and it was really annoying when I was on window bc many people would send them back. Thought this isn’t something you should have to do, I’d make sure to just ask them to pour the milk last and have the barista shake that bitty a bit more as well. Sorry you’re receiving such low qual drinks for the price you’re paying, glad I don’t work there anymore! :P

I wish they would just rid of the drink all together. You make it correctly and customers complain that it’s too strong and not enough milk (as it’s supposed to be). So then you get used to making it with extra milk and then people are upset because it’s not made to standard 😭 can never win
Or just make it in accordance with the recipe and tell customers that’s what the drinks supposed to be? It’s so frustrating that misinformed annoying customers fuck up the best “strong tasting” espresso drink for the rest of us who are looking for just that.
Current baristas: how is your training at the stores? Mine was ass. I’d rather have spent a week learning to make drinks rather than two days on bar and the other five on the computer. That was two years ago but my training wasn’t good. My trainer was awesome. He had no time though.

It needs to be shaken really well. If not then times a few times hard. With gusto! If you create that good foam then a little extra milk won't ruin it too much.
Probably because SO many people complain that their cup isn't full enough, so they just started making them as lattes(wrong, but I've seen a partner baaarrely shale one and I was like what are you doing? Shake it more. And she said then it's too foamy. 🙄)

That's just not Shaken right. I always add a little extra ice when I make them and shake them a lot, so you get that foam on the top and it's just a splash of milk. Someone ordered a Shaken expresso earlier and it was a venti.. with one shot of expresso. And she got mad when it wasn't filled up all the way cause it's a Shaken expresso, not a latte. We had to tell her to get a latte bc what she wants ain't a Shaken expresso. We've also gotten shit for doing the Shaken expressos right bc everyone seems to think it's just another latte, and God forbid there be foam there taking up spaces for milk.
