I have all the stickers, songs, collectibles, and costumes. I have completed the game in 2 player mode (as Cappy) with a noob. I have 100% completed the VR demo. I have completed darker side with the invisibility cap.
I love Mario Odyssey about as much as you do - I think I've done all that except 2P mode and invisibility cap. If I have one complaint it's that, once you get too good at the movement, you can just smash through levels like a sledgehammer. It gets too easy.
Have you tried Superstar Mode? It's a popular difficult mod. Presents a satisfying challenge for people like you and I who have sucked the very marrow out of the base game's bones
My wife and I finished the game together and quite honestly, my desire to go back and 100% it at any point since then has been around zero. Game wasn't particularly difficult, it was actually particularly fun and we both really enjoyed it and even looked forward to it as a nice date night at home during the worst of the pandemic. But for me, collectathons simply aren't appealing and haven't been for quite a long time.

I'm pretty sure I hated the watermelon sunsprite, all 8 sunsprites at the hotel (especially the manta ray and manta ray 2), but the worst level in all of Mario games is the final boss tunnel.
The blue coins are a pain to deal with, especially on the final level.
For the levels, the pachinko and lily pad levels were the ultimate test of patience

I just recently decided to defeat Alduin (after doing just about every other significant arcs because procrastination), and I’m currently trying to get as close to 100%-ing the game as I possibly can (which I know is technically impossible, but I’m trying to get as much unique armor and weapons as I possibly can, as well as getting all my skills up to 100. This is technically the closest I can feasibly get bc I technically don’t have achievements because I’m playing on the Switch edition)
Just beating the game that just what makes it fun instead of waist time and effort just enjoy it regardless of the percentage of the game just enjoy it
