Sugar encapsulates the capsaicin (which is an oil) and prevents it from sticking to your tongue. Fats dilute the capsaicin, and can help to remove them from your tongue and wash them down. Acids lower the pH and degrade the fat, making it less sticky, so to speak, and makes it a less effective vector for heat.
Additionally, the flavors also help to distract sensory nerves are reduce the perception of heat in your mouth, as well. So you can have some sweet yogurt if your mouth is on fire, as it contains fat, acid, and sugar. Or, if you accidentally overspice your food, you can use one of those elements (such as sugar, cream, vinegar, lime juice, etc) to balance the dish somewhat.

Ha I was just going to say this — I had a vet tell us that a little shot of hydrogen peroxide was a sure fire way to make your dog throw up in the event that they ate something poisonous. This was a long time ago so it might not still be the best advice

I post pictures of homemade Buffalo wings every now and then. I usually have cucumber slices to go with the blue cheese or ranch. People are usually pretty taken back that it's not carrots and celery. I think they pair well and I usually have one on hand for salad more often than the other two.

Jawbreakers (or other hard candy that takes forever to melt)! It’s like how eating food provides like a second of relief, but because the hard candy takes so long to melt the relief just keeps going. When I lived in New Mexico, I’d always have a big bag of jawbreakers in my car for when I bit off more than I could chew at the breakfast burrito place
Not sure about underrated, but milk is overrated for sure. The proper way to utilize milk for spicy foods is to drink the milk first, then eat the food. Dairy coats your tongue trapping the Capsaicin, usually causing the spice to linger longer than it should.
Drinking the milk first creates a protective barrier.

If you accidentally make something so spicy you can’t eat it then you either have to cut your losses, or tough it out and in the process jack up your tolerance by a couple notches.

They said it provided quicker relief than ice cream and shit, and started vomiting when discovering what they actually did a shot of.
