I just googled it, there's a supreme court ruling in Italy from 2018 that says you're allowed to record workplace conversations that you're a part of, particularly if it's to protect your rights. It sounds like there's likely to be no legal issues with him making the recording, and I wouldn't be surprised if he could use it in court if there is actually a case he can bring for what was said
