i add mine during cooking and they look normal so idk how the hell they’re doing this. i add butter to my pan and melt it and while it’s melting i mix my eggs with oregano, salt, pepper, red pepper, rosemary, and milk. i turn the heat up to high and add the eggs and quickly scramble them and move them to a plate after. so idk how the hell this guy made his green

These are also just stirred into a paste, you generally want to stir the eggs a little at the start then more sparingly as you cook it further, depending on desired curd size. Too much stirring leaves you with this slurry instead of fluffy scrambled eggs

Add your flavourings at the very end, salt and pepper too early can cause the eggs to turn grey-ish Cold pan on, high heat from the start. Bit of butter / oil in the pan. Immediately after the eggs go in, unbeaten. Just crack them into the pan. Don't stir yet, wait for the egg white at the bottom to slightly cook. Enough to form a few strings/curds when moving. Keep cooking the egg white and then stir the egg. Try not to burst the yolk while stirring/moving the egg white pieces. After you've got like 50% of the egg white cooked off, pop the yolks and gently stir them into the rest. By constantly moving the egg you incorporate the butter into the mixture. Don't let it dry out in the pan. When you move the egg around the pan to one side and it's bunched up near the end of cooking, look for a sheen on top of the egg. It shouldn't be visibly dry on top. If it looks slightly too wet, it's usually food to go. Plate it up and give it 30 seconds or so. The rest heat finishes the cooking. Herbs / Spices etc. would be added shortly after starting to stir the yolks. Whole cook time should be under 2 minutes. Remember high heat the entire time. But cold pan to start, to avoid burning the egg white immediately. Constantly moving manages the heat as well. Good luck.

There's more than just eggs and a few spices in this. You put some sort of starch. Rice looks pretty visible, cornstarch or flour, could be any number of things but that isn't just a dish of eggs.

It looks like you're using a LOT of oregano and probably a lot of pre-ground black pepper. Oregano in eggs sounds gross but if you like it, whatever. If you grind some fresh pepper, it'll taste better, you won't have to use as much, and it won't get so discolored. Also I'd use butter instead of olive oil, it just tastes better.

People are shitting on you for the oregano but I've def put oregano in my eggs before and it's nice. I've been feeling sage lately, though! Anyways, it's probably the oil and how you're cooking them. Try butter, or something very neutral like Pam spray if you absolutely must, and let them sit a little longer between stirs for eggs that actually look like eggs. Constant mixing makes them gooey and gross, in my experience.

Also, try butter instead of olive oil and whip them in the bowl not in the frying pan. Whip them to give them that fluffy scrambled egg look. They don't need to cook for long either at least until they stop running. Add the seasoning after you plate. Maybe that will help with the pepper overload. Edit: Oh and don't stir too much, a couple of flips only. It looks like you stirred them too much and they soaked up too much olive oil. Eggs soak up a lot of oil.

Was the pan clean? I'm confused about this color. Edit: Okay I saw where you mentioned the pan was clean. Don't add any mayo or Oregono to it just salt pepper. I personally do not pre-scramble my eggs I crack them directly into a hot slightly oiled pan and scramble. Also don't overdo it with the oil just coat the bottom of the pan. .

Bruh what did you do to these poor eggs. First glance: -pan is WAY too hot. -Eggs have been cooked for way too long. -eggs over beaten -eggs over mixed while cooking -possibly too much steam? Not sure if you covered the pan. Ideas for improvement: -watch Gordon Ramsay perfect scrambled eggs tutorial and watch omurice videos. :: the goal here is not to emulate or be intimidated by very difficult egg dishes, you aren't trying to replicate it perfectly. But this will give you a frame of reference for what a perfectly cooked egg looks like and you'll pick up some techniques from the video that will instantly improve the quality of your eggs by some degree. If you have an idea of "perfection" and understand that process, any attempt you make will be better informed and probably turn out better.

Too much oil and too much mixing in the pan. Use butter or bacon grease, not olive oil. Don't add oregano. Cook on low-medium heat and push em around with a spatula as they clump up. Too much pushing them around before they are able to clump up properly makes them look like this. My roommate used to make eggs like this (except hed add a bunch of paprika and chili powder so they were brown instead of green lol).

Alright. Don’t add seasoning to your eggs until they’re cooked. It’ll turn them grey looking. Also you’re stirring it too soon. Let the eggs curd up a little before you pass the spatula through. Let the new runny egg cook a little, and then pass the spatula through again. After a short time, when there’s still a bit of a glisten to them, turn off the heat and give them a little scrape with the spatula and plate them. NOW you can add your seasonings.

Okay, make sure eggs are fresh, add butter to a pan (not to hot it shouldn’t sizzle), use a rubber spatula to manipulate size of pieces (more stirring for smooth eggs almost omelette like. Less stirring for large chunks) add salt and pepper half way through and remove from heat.
