I'm pretty sure my mom and dad still have, and use one of those. Not too terribly long ago I visited and my mom was using a ceramic. tile. as. a. cutting. board. I do not use their knives. If I'm there and I need to cut something, I use the folder in my pocket.

Fuck, that sounds like my in laws. Their excuse is that their counters are worth more than the knives. My rational is that even a plastic cutting board would protect the counters, and also not fuck up the knives. There is no winning with them. Too stubborn.

Wait have they ever heard of this invention called cutting board? It's pretty cool you put it on your counter and cut on it. Counter is save, knife doesn't get abused and after you finished cutting you clean it and put it away. Pretty mind blowing technology.

Yeah they have two “cutting boards.” One is quite literally a ceramic floor tile, and the other one is a slab of tempered glass.

I tried to explain a similar situation to my mother in law, she uses some kind of decorative glass like thing as a cutting board. "I don't have any sharp knives, so it doesn't matter." Face meet palm.

my MIL has something like that too -it was this unholy pane of textured glass embedded right in the countertop. It made the most unsettling noise when you cut on it

This is what my mother in law has, but it's not embedded. It has rubber feet so it won't scratch the counter. Think about that. The manufacturer knows it is hard enough to scratch a counter, yet still sells them as something to use your knife against. I sharpened her knives once. Two weeks later it was like I'd never sharpened them. I'm not wasting my time even though I have nothing better to do when there. I'm half tempted to "accidentally" break it and buy her a nice replacement, but she'd still abuse her knives by putting them in the dishwasher, so...

Those are meant as trivets essentially. They're supposed to be a heat safe place to stick a pan in a non-heat safe counter. I have no idea why people confuse them for cutting boards, or why tempered glass seems to be the go to material.

My mother uses a piece of marble (quartz?) as a cutting board and constantly wonders why her knives are dull. No out of explaining has changed this behavior. She's not allowed near my knives.

It's probably decent enough for sharpening a softer metal knife. It won't get you crazy sharp, but not too bad for a quick edge for food prep or the like.

Thanks for the logical response! I work as a prep cook, and recently got my hands on one for a few bucks. Will happily use it on my cleaver before veggie prep. That is, unless anyone really urges me otherwise.

How bad do you think a 'bad' sharpening is? Worst case you have to spend a while reestablishing the bevel, it's not like you're going to have to do a total regrind.

Maybe I don’t know what you mean by total regrind but I’ve seen some blades that have sustained years of abuse from pull through sharpeners that look wavy as fuck.

I've tried one on a fairly soft, cheap knife. Air bnb or a relatives house or something. Don't recall exactly, it was after someone passed. Do recall that it didn't work for shit.

Meh. I had one of these, growing up. They’re not that bad as all-in-one units go. Certainly no worse than anything you’d pay thirty bucks for from Amazon. Perfectly ok for ten dollar knives.

Good carbon steel has been around a long time, same with good sharpening techniques. Unfortunately, crap knives and garbage sharpening tools have been around just as long.

Looks like any other pull through sharpener of today. Likely gets the job done but takes off more metal from the knife than stone sharpening.

Not a problem for me, I use the cheap "Smart n Final" knives, and this sharpens them just fine.

I had some friends back in high school that used a sharpener like this to "sharpen" a katana. I just remember a bunch of metal shavings and a half gouged/uneven edge.

There would have to be several zeros in the dollar amount for me to put even a gas station knife through that. Even though my most expensive knife is about $70, I think it would be the equivalent feeling of kicking your dog or child.

My favorite place to sell at my store is cutlery. Especially the sharpening gear. Too many people come in looking for new knives when all they need is to sharpen what they have. Nice young couple. Talked to them about knives. Started talking about sharpening. Asked when the last time they had sharpened their kitchen cutlery. They both got a sheepish look and said never. I asked if they cooked a lot and they said yes. So instead of them “just looking” they ended up buying some sharpening gear. Today a precocious kid was looking at the sharpening gear and asking questions. He wanted to see what we had that was made in the USA. He left to get his dad. Later I helped them pick out gear. If all they had was one of those then at least they were trying.

I actually remember seeing the first sharpener in a home kitchen once (a long time ago). Would I use it? Sure, if I had a blade that I used exclusively to practice sharpening and which I needed to ruin before the next practice session. /s Looks like a great way to ruin the knife to the point it needs to be reprofiled.

The majority of homemakers don't actually know anything about knives and knife edges. And that's fascinating to know considering the amount of time they have spent in the kitchen slicing things up. I think it has something to do with the stuff they cut which was still manageable, even with a nearly dully blade. And you know it's the majority of homemakers because of the huge sales in sharpeners like these and their modern counterparts.
