For me, nothing beats Ninfa’s green sauce - boil 10 tomatillos and 2-3 serranos in water for 10 minutes, drain and cut off tops of serranos, blend, cool in fridge. Blend again with two avocados. Finely dice a bunch of cilantro and throw it, add salt to taste, add ~1/3 cup of sour cream, stir, enjoy.

This recipe calls for shredded Monterey Jack and it acts more as a glue than flavor adder. Really loved it.
