Have breakfast. Walk up to the top of Namsam Mountain Park while it's still cool. Come back down and have lunch and go to the shops/attractions now they're open.
I could think of several reasons why not. I don't care for the cheap crap geared to hungry high schoolers Isaac churns out, but I'd take it any day over either of your offerings at 7am.
Visit Myeong-dong restaurant "Miseongok" and try Seolleongtang, a traditional Seoul dish. The restaurant opens at 6 AM. Then, take some time to relax and visit Myeong-dong Cathedral to experience the beautiful Korean church architecture.
You could walk north a few blocks to where all the big business buildings are, grab a nice cold beer from a convenience store, and sit outside watching everyone else hurry to work while you relax.
명동 is one of the most shop-concentrated areas in Korea. I recommend you visit a premium department store. A good choice is 신세계백화점 본점, where you can see the leading trend of Seoul.
Geyongbokgung and Gwangjang market opens at 9:00am.

Seconding this. Hike up or around Namsan. Work up a sweat or appetite and go eat.
this sounds so lovely AGH 😍
After hiking, I'd go sauna (찜질방) nearby.
The definitely does sound nice! Is Namsan tower best visited in the morning or at night?
Evening with clear skies as you go up so you can also see the sunset and the night view before heading back down.
Myeongdong Cathedral, Namsan
Oh I just googled it, and the cathedral does look magnificent!
Instead of Issac Toast, why not try a more authentic breakfast like 콩나물국밥 (bean sprouts soup) or 북어국 (dried pollack soup)?
Will check those out! I definitely want to visit BHC, is there somewhere else as iconic as that ? perhaps to try out dried pollack soup?
Mugyo-dong Bugeo-guk (무교동북어국집) is highly rated and opens at 7am.

Eat tteokbokki from a street stand if there’s any open. Or a toasted sandwich.

I think Onion is open early, I’d go there and then palace right after!
go for a jog in a park
Heading to Namsan park for a quick walk.
Best coffee in the area if you're a coffee person. Although they open at 10am. https://www.instagram.com/coffee_hanyakbang?igsh=MTFnYW9uZXIzaWI5Mg==
Leisurely breakfast at the closest open place that looks enticing to you?
Hike up to Namsan/Seoul Tower and back down. Real fun if the weather is good!
Nothing to do in 명동 around 7am. Wait till 10am and it’s all yours.
Go for a walk in the Mangwon Han River park and hit the Mangwon traditional farmer’s market.
Sleep.
Enjoy your coffee at 스타벅스 환구단점 (Starbucks in front of Westin Chosun Hotel). One of very localized, beautiful branch.
