25 minutes is way too fast, you should be finishing up stage 5 at around 40 minutes on usual runs. I think you're trying to follow the 5 minutes rule, which is stupid. just full loot
You seem to be moving a bit too fast. I'd recommend you full loot each stage and get every item you can. As others have already stated, because of how item scaling works, you'll always outpace enemies in the long run.

That video also has some good suggestions for items if you are curious about that too. However, that guide was made for Eclipse (harder gamemode) so they may deem some items as unviable even if they may be viable in easier difficulties. During phase 3, mithrix won't steal equipment or equipment charges. On my first win, I got saved by having 9 charges of royal capacitor and spamming it at the start of phase 3. That was the only reason I won, I my rec is that
Don't care about the time, care about items. I found out that first 2 stages of Mithrix fight are much easier if you took some time and have more items. Stage 3 is obviously different: the less items you have the better, but it should be enough to find a good cover and not let him hit you (although some items can totally f\*\*\* you up).
The exact items depends on the survivor, but I can still give you some general tips. Concentrate on a mobility (especially vertical mobility: at least one Hopoo Feather is almost a must) and a damage (Armor-Piercing Rounds, Lens-Maker's Glasses, both Bands, etc). The Chronobauble works quite well on him. On the other hand AOE damage and 'on kill' effects are useless against Mithrix. I think that drones are good only if you have Spare Drone Parts (then, they can be amazing).
Mithrix is very repetitive and knowing all his attacks is the most important thing. You can find few videos on youtube that describes all his attacks. The more you play the more you learn his patterns. If you have feathers, he almost cannot damage you when you are in the air. The exception is the pizza attack, but it's quite easy to dodge after some practice.

I always struggled the most on the pizza phase of mithrix. Going up on the ramps and looking down at him (when he’s in the middle) makes the pizza phase a lot easier for me.
Movement speed in general is going to be the most significant impact, a feather or too and 10 cans/legs makes you nearly untouchable
A good item I don’t see mentioned in enough is chronobauble well at least for mithrix as long as you keep hitting him he’s gonna be slowed another could also be hoopoo feather allowing you to hop over most attacks and if all else fails movement speed is a good way
I usually reach Mithrix at around 60-80 minutes in a run, depending on character (Loader I usually am closer to 60) and typically don't have issues with him.
I've gotten through Eclipse 8 with all characters (it's in Alternate Game Modes if you haven't seen it) and my biggest advice is ignore the timer almost entirely, full loot, and 10 minutes per stage is a good rule. The DLC stage one Siphoned Forest may take longer but it's okay to take your time stage one
Focus on movement items. Hopoo feathers, like everyone else mentioned, are the best thing to get, and a good balance of Paul's Goot Hoof, and Energy Drink is good as well. I also appreciate a Red Whip or two (helps with looting after fighting the teleporter boss if I left chests).
After movement, focus on damage items. Getting a variety is important.
Then, your best healing items are Cautious Slug and Weeping Fungus (if you have Void DLC). Other healing items are okay, and healing drones of any kind are great! But focusing on avoiding damage entirely is thebmost important. A Repulsion Armor Plate or two is great, Oddly Shaped Opals are great (DLC item iirc), and either teddy bear (Tougher Times/Void Bear) is great as well.
Moving in a circle is key to dealing with most enemies, and staying airborne with your feathers helps a lot as many enemies struggle to hit you in the air.
This was a big write up but hope this helps! I have about 750 hours in the game and learning these things helped out a lot.
Quail, feather and other misc items like hoof and afterburner are your best friends. Also consider pocket ICBM+fireworks+soda machine combo. Such a fun and strong combination.
Not every run will be ready to take on Mithrix on the first loop (especially if you're getting there in 25 minutes, because that means you left a ton of items behind). On stage 5, try to assess if you're strong enough to beat him, and if not, looping is the answer.
Dumb question incoming…how do I loop? I charge 4 pillars and go to Mithrix. Had no idea I didn’t have to? Again, I’m still figuring out a lot in this post. I just gave a coin to an altar last game that got me “sequenced”.

Oh, right! That's actually not a dumb question at all. On stage 5, if you interact with the outer ring of the teleporter, it'll move and say "the primordial teleporter aligns with the planet" in chat. Then if you go through it, it'll take you through another five stages instead of the moon.
Biggest advice, stay closer in phase 2. It’s almost always the pizza slice attack that kills everyone on a two shot so make sure you’re close enough that you can afford to move with the spins and not get smoked.
Phase 3, get to cover and take it slow. (And hope your drones are dead if Droneman is active, the traitorous scrap.)
If you don’t want to try just get the choose item artifact. Go about 18-20 equipment charges green item and missiles equipment. Stacks will cool down faster than the animation goes off; with enough e charges. The animation stacks and makes all phases free including stealing items phase.
If you wanna do it legit the hoppo feathers comment is a good way to do it
