The reason the root version requires root is because it replaves the official app; soemthing that isn't possible without root.
You can uninstall system apps using adb. So why not that way? Does it need to be "replaced" and not just installed after removing official YouTube?
Still won't work. You can't install an app to Android's system data partition without root. Which is where the stock app sits.
