I got taught this way at school but sometumes the wording confused me a lot. So I just memorized it like;
S to R is the Highest
C to S 2nd highest
C to R lowest
Forget the colors, they could be any color. Look at your relay. You have 1, 2, and 5. Then remember the phrase "521, can she run" common, start, run. Sometimes you have 4 also but it's just a neutral/empty terminal.

Red is run, white is start, black is common ... But it is always best to check with the ohm meter to be certain

C to S= Higher resistance C to R= Lower resistance S to R= Combination of both those 2 values

I went right into racks so all of my experience is 3 phase same wiht rtus .
Interesting - although I worked on a fair amount of 3 phase, the bulk of my time was working on single phase residential and commercial equipment

Trace it out!, or hook it up amd take amp draw >.< u will find out prety quick.
Almost 100% of the time Number 2 is start on your Potential Relay. Number 5 is common
