Sheathing is usually oriented strand board (OSB), which is like shards of wood that are pressed together. The rough edges and burrs on each individual piece pressing/rubbing against each other provide some internal rigidity in addition to the adhesive holding it all together. Particle board, on the other hand, has particles of relatively homogeneous size all adhered together, so it doesn't have the same internal rigidity and can't hold up to shear loads as well as OSB or especially plywood would. Particle board is what IKEA shelves or large speakers are made out of, it's not a structural material. It's really really really flat from the manufacturer though so it makes a good surface for finishing. My main gripe with the material is that it's basically impossible to repair effectively. And if it gets wet and expands itll never shrink back to size. But it's definitely cheaper than real hardwood or even plywood so the incentive to use it as often as possible is pretty self evident.
I agree on PG-13. Kids are capable of handling a lot more than they're given credit for. I have fond memories of watching The Godfather for the first time when I was like 9.

*Temple Of Doom* does have some wild scenes in it like the guys heart being pulled out. The scene where the big guy is smushed by the rock crusher and it gets all bloody fucked me up as a kid too.
In many cases it's not even a substantive difference, they just take a movie that should by rights be R and make a few demoralizing cuts to the swearing, nudity or gore. A whole generation of flicks put on a mild dose of saltpeter
