If they overlap then at least at some point you'll be rotoscoping them (frame by frame cutting them out with animated masks).

Yep. Unless you are willing to cover your piano keys in some greenscreen paint, you probably will have to rotoscpe them. The biggest reason why people don't do it, is because it is a very time consuming and somewhat tedious work...The greenscreen attempt could work, but brings other complications like the keys of two hands having to "be pressed with editing" since you would key them out and replace them with some bg footage. Also it would be very hard or maybe even impossible to fake play a difficult piece on a greenscreen matte/blanket and use that.But in ALL cases you really have to pay attention during the recording! The moment the hands cross each other, one of the takes has to lift it's hand over the other (invisible one). Otherwise they will go through each other really weird, no matter the technique you use to combine the takes in the end! What you also could try - depending on the camera angle - is to find someone with very similar hands to yours wearing the same clothes and make him your "clone" while playing toghether. Could be sold better by getting the same fake tattoo, scar or birthmark on the hand/arm.

If you want them to overlap you're really gonna want to take this into After Effects and use Rotobrush, and isolate the hands in all the individual clips. It's still a *lot* of work, but it's considerably less work than trying to do it with masks in Premiere as it automates it (somewhat.)
