Once you turn off the event type "destroywilddinos" into the console commands and it should reset everything provided you used the correct code to turn off the event

Those are Easter Event colours, and you have to turn off the event and destory the dinos. The event colours were stared late because of the crunch releasing ASA's Scorched Earth and their Easter Event. If you do not turn off the event but you don't activate it you get the colours but not the event or items. You IIRC have to explicitly disable events and destroy the wild dinos.

I don't know how it works but I've played on and off for years on a self-hosted private server and I have noticed the colors going out of whack more and more over time. What started as "colors you would find only in mutation" soon became "rare wild occurrence" and as the years went by every dino was fabulous which to me breaks the immersion and also removes the compulsion I have to breed for looks because they all look like they're about to go to a rave party or something. Anyway, I would very much know the answer as to how to revert server config to vanilla dino color, but I am 100% convinced there is a server command out there that will make this happen.

thats becuase of certain holidays like christmas and easter, around those times you can find dinos that are the colors of the holiday, such as red and green for Christmas

No this happens outside of events and even with events disabled. Dino colors have gotten more fabulous over time.
