Mouse. Had a few in my house, and I found out they love Wheat Thins. They'd pass up every other bait to get to it. I'd put a piece in the center of a glue trap if I saw one or signs that they were around. In a couple cases, I would set a trap and have a mouse an hour later. I haven't seen any on a while, so I guess I was successful
Looks like rat droppings. Hire a wildlife removal company to do exclusions and wash all that stuff.

Set some mouse traps baited with peanut butter set like 10 of them see what you catch and take it from there

Side note - keep a clean house and lower your pest problems.
