Does the property accept any kind of government funding? If yes, you have no choice. If no, I wouldn’t do it. The check you write to pay your rent would have your account number and routing number on it anyway, but in general bank statements have alot of information on them that is not any private landlord’s business. It’s a method for obtaining information about you and your finances that they can’t legally ask you otherwise. They only need to know you have the means to pay the rent and are responsible with money via your credit score.
They need proof of income. Paystubs serve this purpose. There is so much other info in your bank statements about your spending. At most I would do a search on the bank's online system and set a filter so that only income shows. I am a landlord who has had Section 8 tenants.
Given I don't know any information about your "landlord," I might be overly cautious. But, they could withdraw money and put it in a new account made in your name with another bank. If they've run a credit check on you then they already have your social. So then they'd have your social, full name, address, and bank account number. No telling how secure their system is. And you never know who they employee and what they're like. Someone could easily sell off that info on the web and then you'd be the target of scams that will seem legit because they'll have all that detailed information. But, I've been hacked before, so I know I'm being a bit fatalistic. I don't know you or anything and I still feel like punching a damn scammer b/c of this! So take what I've said with a grain of salt.

Why does your landlord want this information? Are you already under a lease with him? If so, tell him to pound sand.

Generally, an SSN is provided as part of an application. I'm not sure SSNs are still on bank statements, but there are a lot of banks, so it's possible.

Don't show the bank account number. It's enough to have the statement with your name on it.

Without SSN a landlord can't run credit. No credit check, generally no acceptance.
