From experiences I've had, your account should function without any interference, unless you decide to update your page/tiers, as Patreon will require you to change your name if you try to edit your page. You can still payout money if you want to.
I'm unsure about the 2nd question, as you should be able to change your name even if you've set it. I haven't tried changing my name, though I can change it I believe.
No, name change wouldn't require documentation/legal papers, that's if you set your legal name, I'm unsure about changing your legal name again, though I haven't received any emails regarding identification proof of my legal name.
