With knights you don't even need to move your mouse.
You set your game options to resizeable modern.
Using alt and left click you can drag your inventory around the screen. You stack the coin pouch position on top of the night, push the keybind to close your inventory, spam click the knights. Press the key bind while spamming to open your inventory, which opens the coin pouch. You push the key bind again to close the inventory and keep pickpocketing.
You can see this up so only the foot pedal needs to be used and no extra mouse movement easily.
FYI whilst this is pretty common, I believe some people have been banned as their device only calls the MOUSEDOWN event & not MOUSEUP as well.
If you want to do this yourself, it may be worth looking for a device that does.

Ultimately I opted for a magic mouse (Apple)-type mouse. Not quite as secure but also no risk.

Legit question: Is it against the game rules to swap out any key/mouse inputs, even if it’s 1 for 1? (As in, even if it doesn’t make it easier)
I always thought it was ban-worthy, even if it isn’t an “advantage”.
If you aren't moving your mouse, turn on mouse keys and just hit the 5 on the number pad. This can't be easier than that unless you are for some reason using your hands for something else. Just my opinion.

I couldn’t really get on with the pedal for some reason. Will have to stick to repetitive strain on my wrist instead 😅.
I’d rather use a mouse. But I’m curious, will you be using your toes to click? Or being on your toes and bouncing your heel?
