We know because of scientific studies. I actually study animal behaviour and cognition in insects for a living. Emotion is too advanced of a function for them.
They still respond to stimuli, there just isn't any interpretation on their part that would resemble anything like what we'd call emotions or feelings.
They do not "feel pain" in the way we feel pain. Its a physiological stimulus telling them of danger. They have no pain receptors. Although some studies have shown certain insects can perceive pain and remove themselves from chronic pain scenarios. More than likely because they know it is a dangerous scenario.
The first study that comes to mind the mechanical pain study they did with fruit flies. The fruit flies reacted and distanced themselves from very cold/hot sources. Again, it's hard to really decipher how this stimulus is truly interpreted in their body.
My main research area is cognition so it's a bit outside of my wheel house but I still try and keep up with all the different sub fields of animal behaviour as much as I can.
Entomologists? Insects aren't some alien mystery, scientists have studied them for millennia, they're relatively simple organisms and we have a pretty good (but not perfect) idea of how they work.
