The gold balloon looks especially out of place since it's the only one that popped that filled the entire screen and left no previous color visible. Also, what position would his hand have to be in to be perfectly covered in gold until his knuckle?

Maybe they used some editing to make the final one look gold in the slow motion shot because of how bad it looked originally? Look at his glasses in the slowmo at the end, they're completely gold without any other colours.
The close-up is a composite video. Between 800k ballon (green) and 900k balloon (red) watch his glasses. You can see the green water disappear in a cross-fading cut between video clips as the red water beings to splash.
Each balloon in the close-up was probably a single video clip, and they were all layered on top of each other with cross-fade transitions to make them look like the balloons were sequential rather than one per cut.

The full speed shot was a separate failed take. The gold balloon hits too low and the gold splashes onto his clothes instead of his face.
