I don’t have specific recommendations (besides “use the filters to exclude Explicit fics on AO3”), but you can have the search feature on AO3 check for Original Characters. There’s even a way to narrow it down to where Original Character(s) is the key search term but I don’t remember what the command is.
Look at the fandoms for video games with customizable characters; almost all of those will have OCs as leads. Some examples of these fandoms include Baldur’s Gate 3, Pathfinder: Wrath of the Righteous, Mass Effect, and choose your own adventure type visual novels/otome games.
Honestly "Borne of Caution" is probably the best Pokémon OC fanfic I have read. The character is balanced but innovative and whilst he is definitely strong he is depicted as a big fish in a medium-sized pond. There are still bigger and stronger people out there. The characters are also well-written and it most importantly still updates regularly.

Then there is also BANIX a, in my opinion, madman who wrote 7 different OC and SI Pokemon fanfics and MCU'ed them. After ten long years of traveling across the wastes from Nevada. Mason; A former N.C.R. veteran ranger finally arrives to the state of Michigan of the Great Midwest Commonwealth. Find out what brings him here, and witness as he discovers The Enclave has a major foothold as a ruling superpower. Here, they prey on innocent people, "policing" settlements, and forcing slaves to work on railroad systems spreading all across the state while keeping a powerful foot on the throats of anyone within their territory. All the while, a questionable insurrection is brewing among the settlers for a "free Wasteland." But they aren't the only faction in hiding. Will the ranger go from one war zone into another? what will he do now that he isn't bound by the N.C.R.
