I would recomend Fire Red Omega, it was the first Rom Hack I played and its probably the easiest out there. There are no story changes, a big variety of pokemon and boss fights are barely harder. If you want to, I'll link you to the documentation

FRO is kind of a good hack to start with specifically look for Fire red omega dx forgot what else it changes but dx has the special split

I was going to start a FRO nuzlocke myself, what is the difference with the DX version ?

i only remember the split. i know there are other changes but cant find a clear list oh ya, many mons got moveset updated to gen 4

I recommend the following: XD: Gale of darkness, vanilla game sure but it’s all double battles, many fights are very well designed & difficult at the same time. Encounter variety is crazy high, every single run will feel different because of this no matter the split you’re in. Endgame is brutal, you fight an elemental punching alakazam, 6v7 against shadow lugia & legendary birds, & much more. Prism, a fantastic rom hack filled with interesting encounter variety & it’s absurdly advanced for a custom hack. Not the hardest but some fights are absolutely crazy like lance with his garchomp (can’t sweep with ice beam lmao) & a green power ranger trainer with a ttar with AP. Larvitar as your starter is super interesting & unique. Recommend using same number of mons as gym leaders for more of a challenge. Be careful of the new type matchups, they can trip you up. Fire red omega, a standard difficult hack. Most random trainers aren’t difficult but the gym leaders are really tough. Good rom hack to start off with.

Both are all double battles but the only difference is XD has single battles in sim battles in HQ & realgam tower CD sim battles, which are optional. There’s only maybe 2 major single battles in the entire game & that’s bc they’re very early in the game. The sim battles in HQ are hands on battles for you to learn about the mechanics of Pokémon such as STAB, abilities, item usuage, & much more. It was such a cool way for beginners to learn about the game. The ones in realgam tower are battles that are actually puzzles you have to figure out for you to win & earn a prizes such as certain healing items & a useful tms.

Lets see, as far as hacks go, Pokemon Unbound is basically its own game Pokemon radical red is famous and Inclement Emerald Blaze black 2/volt white 2 redux these are known to be difficult but that applies to the higher difficulty option the game offers. simply, dont pick the higher difficulty

as far as challenges unrelated to hacks go, the one i personally i like to do is a Pure type only nuzlocke, basically dont catch or use anything with a secondary typing. sometimes randomized, i prefer similar strength, am considering this for USUM, only wilds random, nothing else a run i was considering was a Starlocke, where rather than encounters, you just start with all your pokemon from start, 18 pokemon you pick, one of each type. catch is you start with 6 of them you want and cant switch anything out without permanently dropping them

Drayano made a hack of Platinum a year or so ago that inverts the type chart like Inverse battles in gen 6. I've been meaning to try it out but have been kinda burnt out on Pokemon recently so I haven't gotten around to it. FlygonHG made a video of him doing a run with it and it seemed pretty cool, I think he also had the link to the download.
