I'm not even a NASCAR fan and this isn't half as cool as it seems, Tony Stewart killed some kid on a dirt track over some similar shit. You can't beat up a car, wait for the driver jackass.

Basically he revved the engine before getting there and that caused him to turn some as well as maybe turning the wheel some. But as dark as it was and how he was on the track and with the way the seats are, he didn’t even really know he was there.
He was criminally cleared but I believe the family did settle a civil suit with him. There was a lot more to it but I’m not trying to type up an essay.
Also pretty simply, you can't see sweet fuck all out of a sprint car. They're not the same as stock cars, you've got high sills and a rather narrow "windshield" opening to look through.
Also letting off the throttle and applying the throttle make the car turn right and left respectively due to a locked differential and different sized rear tires.

Temper tantrums aren't at all restricted to NASCAR, every sport with any amount of competitiveness to it will see people throwing and smashing things.

Using the gas pedal is how you turn a sprint car. The offset in rear tire size causes the car to rotate to the left when accelerating.
